Valentine's Day Special Round Up!

Did I keep you waiting for this round up? if so, I am sorry from straight of my heart , I know its very bad to keep anyone waiting without giving any proper reason. Now when I am guilty for this, let me clarify the reason too. I was out of station for few days, actually was supposed to be back on 17th and planned to take up the round up for all entries then, but instead of that I came back just yesterday evening, as our trip got little extended. The first thing I do as soon as I get in touch with my beloved laptop is to draft round up and post my own entry too.
Hope you all will forgive this friend of yours... :)

Our wedding anniversary falls just one week before the Valentine’s Day. This year we couldn’t celebrate as our son was sick. So, I decided to make up for it by celebrating the Valentine’s Day and surprising my husband. Beetroot is one of my husband’s favorite vegetable and hence came the thought of making beetroot halwa to my mind. I made the halwa the day before the Valentine’s Day and shaped it round so that it looks like a cakeJ.
At 12 in the night I took it upstairs and he was really surprised at my creative idea. Then we cut the halwa together pretending it to be a Valentine’s Day cake. It was a perfect starting for the Valentine’s Day. In turn he surprised me in the evening with roses.
The basic ingredients required for this recipe are beetroot, ghee, sugar and nuts. Some form of milk product, may be milk or condensed milk or ricotta cheese is optional.
Below is how this particular preparation is made:
Beet root grated - 2 cups
Sugar - 1/2 cup
Ghee - 1/2 cup
Milk - 1/2 cup
Preparation method:
1) In a frying pan, add, 1/4 cup of ghee
2) When the ghee is hot, add beetroot and fry till it is soft (<5min)

I came acros your blog a few days back and am following most of your recipes from then on. :) Your recipes are really good and aptly named-- "creative". I read about the theme for this week and decided to contribute the easiest recipe availabe. I hope you will accept my recipe though I am not a blogger.
This was my first Valentine day with Hubby dear as we got married in June 2006. Both of us beleive that we dont need any "day" to celebrate/express our love.. So "Every day is a Valentine day for us" ;)
One fruit that you'll find in my house most of the times is Strawberry. My hubby, Rahul, loves strawberries. Another thing he is crazy about is Yogurt. None of his meal is complete without Yogurt. So I decided to try out something with his favorites. And Strawberry Lassi was the first thig that came to my mind. It was ready in 5 mins and resting in fridge for another 3 hrs waiting for compliments. Needless to say, Hubby dear loved it :) Here goes the recipe-
STRAWBERRY LASSI
Ingredients:
1/2 cup plain Yogurt
1/2 cup cold water
5-6 big fresh strawberries
4 tbspn sugar (amount may depend on strawberry taste and may vary according to desired taste- sweet/sweet n tangy- typical strawberry taste)
Recipe:
1) Wash and cut strawberries in big pieces. Grind them in a mixer with sugar.
2) Whip yogurt using a blender and add water.
3) Add the strawberry sugar mix to yogurt and mix well.
4) Best served chilled.

I was planning to make something to easy to make and likable by both of us too, so that I don’t have to spend lot much time in kitchen and can spare some time for both of us to recall the old(though not so old, we are married since just 1 year and 9 months :)) ) and golden memories. Though we are less than 2 years married, it always seems like past when recalling the days before marriage or the starting of marriage.
Hubby is a big paneer fan . He loves any food cooked with paneer.
And as he knew already that there is going to be something special for him in lunch , I think he was expecting some nice change too.
I made matar paneer(Green peas with cottage cheese) with plain flour roti. Which also he loved very much. It’s the first time I make roti from maida(plain flour) at home, normally only when eating out in restaurants we had it.
Along with his favorite vegetable Pulao . .. and he was totally happy to see it.
Matar paneer here I made is from ready made masala of rasoi magic, which includes everything in it, just I add green peas and paneer, as instructed in it.
If it is available in any store around your place, then I strongly recommend to try this one, easy and too tasty . also cooked within minutes. : ) . I tried other vegetable masal of rasio magic too , but this one is defnately better tan all of the rest, the second one I would recommend to you is Paneer tikka masala from rasoi magic. Try it some time, and just like me you will fall in love with it.
Here is how I make it.
Take 1 tsp of oil and when hot add , finely chopped 1 tomato to it. Cook for a while and then add the rasoi magic masala mixed with 1-2 cup of water , such that there isno lumps formed in the gravy . cook it on high flame and add green peas to it. Cover with lid and cook till the gravy reach to desired thickness, finally add paneer cubes to it and cook for another 1 minute.
I added 1 cup fresh green peas and 200 gms paneer cubes to it. And the result is in front of your eyes. This was simply great that what we get in restaurants. Not so spicy not so mild, I just love it, and so does hubby. :D .
Basically he loves anything thing with paneer, such that when in the evening we went to a Chinese restaurant – Mainland China here, he ordered tofu with exotic vegetables there… : )) .
For vegetable pulao :
Ingredients:
½ cup green peas,
1 carrot peeled and cut into small cubes,
1 onion finely chopped,
1 potato , peeled and cut into cubes,
2-3 cloves,
Ghee for tadka,
2-3 Bay leaf,
Pinch of turmeric, salt to taste,
2 cups cooked rice.
Method:
Cook rice with water and keep it aside draining extra water from it.
In a pan add 2 tsp of ghee/oil, when hot add bay leaf and cloves to it, along with onion to it. When onion turns translucent add potato cubes to it, cover with lid and cook it until potatoes are tender. Next add carrot ,green peas and salt to it and cook until they are soft. Add turmeric to it and mix in the cooked rice with it. Mix well together and turn off the heat. Serve hot with anything you like.
For desert we had Strawberry Icecream, this is my first attempt to make ice cream with strawberry .
Ingredients:
12-15 strawberry
3 cup milk,
2 tsp custard powder,
½ cup thick cream,
Sugar to taste, I used 1 cup.
Process:
In a big vessel heat the milk, when it come to boil add custard powder to it, mix in well and stir such that no lumps will be formed from it. Cook it on high flame and stirring continuously until milk is half of the original size ,add sugar and milk cream to it. And stir again for few minutes on medium heat. And turn off the heat after 1-2 minutes. Place it on side and let it get to room temperature. Until then in a mixture grind the strawberries to a fine paste without adding any extra water. And when milk mixture is at normal temperature add it to that, and mix in well . Place it in a freezer in a container and and when it get frozen for the first time, remove all of them in a grinder and make fine paste out of it, it will help the ice cream to be turn little more thick in consistency and will remove ice particles from it, if any .
Again in a container let it freeze and serve when it get to normal ice cream coldness.
With scooper remove it in a small bowl and decorate with strawberry and serve chilled. If you like, add some fresh honey over ice cream to make it even richer in taste.

Some memorable moments :
We got married on 29th of May 2005. on 14th feb. 2005 it was the first Valentine’s for us after we come to know each other, before our marriage He used to work for late hours and he loved his work, though now he has changed totally with that and don’t give an extra moment to office : ) .
On that day , I got a long email from him , and a part of it I am going to share here.
This is what he wrote
"Hard to make a sentence, as words are slipping out of my hands as Ithink more of you.I know that you are the most beautiful girl on this earth for me to love and I am happy that I am doing so.
Most beautiful not for whatyou look but for what I felt of you.
Beautiful for what you make me inyour love.
Beautiful for selfless love and tender care that you gave me.
Beautiful for loving me in spite of all my weakness.
Beautiful for believing me even though we meet once in life.
Beautiful for loving me not by looks and the thousands that I earn butfor what your heart and soul tells you."
That email was too long, here is just a part of it, and I love reading it again and again even today, at least I am happy that what he said is not a false promise or some words to impress me, it is true even today, and I feel it in each action of Deepak.
Aloo Paratha(Stuffed potato paratha) with Tomato chutney & Grapes Juice

Ingredients:
1 cup wheat flour
2 potato boiled and peeled
½ tsp Cumin powder,
½ tsp chaat masala ,(or dry mango powder and pinch of crushed black pepper)
½ tsp redchilli powder,
Salt to taste,
½ tsp lemon juice,
Sugar to taste (optional)
Oil for shallow fry
Method:
Boil the potato until they are soft and tender. Remove sking , and mash them , mix in cumin powder ,chaat masala ,redchilli powder, lemon juice and salt in it. Keep this aside.
Knead the dough , using sufficient water and salt added to it, when done apply some oil to it, this will make it smooth. Knead it soft enough like we make for roti/paratha. Make lemon sized balls of it and roll out into a small round shape of it. Place spoonful of potato stuffing in the middle and cover it from side as shown in figure here. Now again slowly with care roll out to small sized round of about 3-4 inch diameter.
On a hot tawa place it, and let the first side cook in slow heat until it is half cooked. Turn the side and let the other side also get half cooked.
Now turn the paratha again and apply some oil from the side of Partha to the side below, this will give it chance to get puffed from side and center too. Turn the side again and do the same for another side too. Cook until golden brown on both sides and serve hot with anything you like. It goes well with a cup full of curd or green coriander chutney.
I had this in brunch this Saturday accompanied with quick Tomato chutney. Which hardly take 3-4 minutes to prepare it.
Here the method to make it.
Ingredients :
2-3 medium sized tomato finely chopped,
3-4 dry red chillies,
6-7 curry leaves,
½ tsp red chilli powder,
Salt to taste,
A pinch of asfoetida,
1 tsp oil.
Method:
In a pan heat the oil. When little hot ,add curry leaves , asafetida powder and red chillies to it. Just in a while add chopped tomatoes too.
Cook it on a high flame, cover with lid for 1-2 minutes, then stirring occasionally cook it until all the water part of it evaporates and oil starts separating from tomato pieces, it will form a thick gravy like consistence, add red chilli powder and salt to it, serve with anything you like.
This is what we had in brunch this Saturday. Normally we take bread , toast ot other light snack item with milk in the morning. I prefer to have meal on time , on week ends so normally we get lunch ready by 12.30 -1 p.m on weekends.
Just few days ago Deepak was recalling his college days when he was staying in hostel and they were getting Aloo paratha in the Sunday breakfast there , he was just telling me that it was the only reason he got up early on Sundays that time. Though I know he likes aloo paratha , I didn’t know he loves it this much ! (I made aloo paratha so many times before this , but that is for the evenings when we don’t want to have heavy dinner and for him it goes nice with plain curd. Also that time I made it different way by adding coriander leaves, green chillies and other spices to it .this time as for bruch I have added all the ready dry powdered spices ,to make it quickly. )
Now when it came to make something to make him happy I thought to make it. I know he loves spicy tomato chutney made this way, so got the perfect idea of brunch for last weekend. Accompanying this dish was fresh juice of green grapes. It was a perfect dish- tasty aloo paratha with spicy tomato chutney and soothing juice. :)
He was more than happy to see this surprise from me, as he was not aware with what’s going on in the kitchen and was busy with a phone call, when I presented the whole dish in front of him, he just stare with happiness on his face with a broad smile : )) . And still keep on reminding me that he liked my idea of brunch that day very much.
Still some more dishes from me to share with you all with some memories to cherish with that, are coming their way, till then stay tuned and keep cooking: D .
(Hubby didn’t know till then that I have announced any such theme for Valentine’s day , now when he know this, he keeps on asking me what I am going to make for surprise lunch for him : )) ) .

Theme of the Next Week - Valentine's Day

Remember those days just before our marriage ,how romantic we all were ! We were just feeling like love is all around us that time, right? As time passes we get used to things in life , and start understanding each other , be compatible with each other, and though life gets better by understanding our life partner well, we almost forgot to express frequently how much we love our better half, as we used to do in initial days of our marriage. Isn’t it true for all of us in one or more ways?
Well, then lets all do it once again , tell our beloved how much we love them and how good our life is by having their support in each matter of our life.
Having all of your suggestions with me, I thought to celebrate this week as Valentine’s week. And the theme for this is little versatile .
They say 'the way to man’s heart is through his stomach' : D.
Cook anything to make your better half happy in a special way , and let us all share our experiences together here in round up .Like what you cook, why you cook it, and how did he find it etc etc… (if you wish you can write about your story like how you met him and all , that is if you would like to add then only, but I think it will be great fun to bring back memories of those days and share with out buddies here. You can also share what he gifted you,and how special you were feeling that time etc..., In short anything related to Valentine's day from your treasure :) )
Let us all remind our special One , of his value in our life, and just for some time forget anything else , like- our responsibility , our busy schedules , or other priorities.
Having something with the color red or pink in the dish will be like ‘Sone pe Suhaga ‘ (adding fragrance to gold, and ), but that is truly optional( I think there are many options to have red/pink color in our dish , i.e. Pomegranate seeds, red grapes, Beet root, anything of rose or straberry flavor) I keep it optional as there is different choice for our favorite meal for all of us, :) so Cook anything you like to make a perfect evening for two of you and share it with us .
I think as all of us will have some other plans to celebrate 14th feb. in a special way , or some where outside home , I think this weekend is a good time to make our beloved happy. Valentine's day is few days away !
Green Peas Pickle

Though to try this way of making pickle out of peas :), and it turn out really nice. Hope you pickle lovers there will enjoy it. i jsut know that Supriya and Sra love differet kind of pickles, so atleast forthem it will do good , right Supriya and Sra? :) . Well, Hubby is in your line, so I try making different variety of Pickles at home a lot. This was tasting nice will good aroma of fennel seeds spreaded in the whole dish. Here is the way I make it, simple and easy.
Ingredients:
½ cup peas
4-5 green chillies
2 tsp mustard seeds
2 tsp fennel seeds(saunf) – roasted,
1 tsp salt
½ tsp turmeric
4 tsp oil
2 tsp lemon juice
½ tsp red chilli powder
Method:
In a grinder grind mustard seeds and fennel seeds to a smooth powder.
Cut green chillies in to 1 inch long pieces.
In a pan heat the oil, and turn off the heat when oil is hot.
In this hot oil add green chillies and green peas, then add powder of mustard seeds and fennel seeds along with red chilli powder, turmeric powder and salt.
Add lemon juice when the mixture is cold. Store it in a air tight container. This pickle can be eaten after two days.

Will post a theme for the next week, before that I would like to have your suggestion on this, as already some buddies have suggested. I think this theme idea should be fun for all, and as valentine's day is coming near , all seems to be Pink in mood :D. Let me have your ideas about how we all should celebrate the next 10 days together when 10th day is going to be a valentine's day ! Will wait for your idea , and decide about the theme and post it on monday ,for which final round up will be done on 14th february -wednesday . Come up with something nice, and have a fun .

Green Peas pakoras ,Pau Bhaji & entries for Green peas.

Green Peas Pakora With curd.
Ingredients :
½ cup soaked moong dal ( Green gram split)
½ cup Green peas
1 inch long ginger root.
1 small onion,
2-3 green chillies,
1 tsp red chilli powder,
1 tsp cumin seeds powder,
Salt to taste ,
2 cup curd,
Method :
Soak the moong dal for 2 hours .
Grind the Green peas and moong dal along with ginger, onion and green chilies into a fine paste and mix in the salt . Do not add extra water while grinding .
In a kadhai heat the oil, when it is hot , fry spoonfuls of the mixture in oil till pakoras are crispy and dark brown .
Whisk curd thoroughly and add salt , cumin seeds powder and red chillie powder to it .
Ina serving dish , serve pakoras and add curd onto it.
Tastes good. A slightly variation to this is before serving you can soak pakora in water and press it before serving, this will remove excess of oil. (this is same as we do for dahi wada. )
Pau Bhaji
Ingredients :
1/2 head cauliflower
2 large potatoes
11/2 cup green peas
2 long carrots
1 big onion
3-4 garlic clove
1tbsp ginger (Shredded)
1tsp turmeric powder
2tsp cumin powder
2tsp red chili powder
4 tbsp oil
Butter to toast Pau
Method:
Peel and wash potatoes and carrot. Cut potatoes into cubes, and carrot into small pieces.
Cut cauliflower into small pieces.
Grind 1/2 the onion, ginger and garlic into a fine paste.
Boil the cut vegetables in a pressure cooker in 1 cup of water for approximately 10-15 min or until they are soft and tender.Do not add grean peas to it.
Drain the boiled vegetables and mash lightly.
In a Pan or kadhai, add the oil and heat Add the onion/ginger/garlic puree, along with the finely chopped green chilies to the oil, and cook till its golden brown.
Add turmeric powder, cumin powder, red chili powder and salt to it, sauté for about 2 minutes. Add tomatoes cut into very small cubes, and let cook for 5 minutes.add green peas and cook it for another 2 minutes until peas are soft.
Add the mashed vegetables to it and mix thoroughly, if it is too thick then add little water to this. Cover the Pan with lid and simmer for 10 minutes at medium heat stirring occasionally.when cooked turn off the heat , and add the little butter on the top of it .
Transfer Pau Bhaji to a serving dish. Cut the cilantro and 1/2 onion and sprinkle on top as garnish. Serve along with lemon slice on side.
Serve with butter toasted Pau.

Hi all ,
Just switched to new version of Bloger ,which is beta no longer ! It's their professional version now. It is not allowing me to login with my old id, and thus I switched to this now !
I heard that there is somple problem with blogger , and someimes it shows comment as anonymous( I hope they might have recovered this problem , as they are switching to professional version from beta) though not sure , so my kind request to you all to put your name after leaving comment here. Uptil now I am not able to see my blog , just by writing URL in the explorer,so no post for today ,will try and check it if works fine tomorrow.
I hope atleast this post will appear when my blog start working. the only way i can see my blog right now is by checking my template an watching its preview, I hope they will solve the problem by some time , so that I can appear here with my post and your entries. Dont know whether this will be hown or not, as when I try publishing this , it shows the same error. If it appears fine to you then , in the mean time check my Entry for JFI- Ginger Here.
I created a new blog to participate in lovely events around here,this idea is totally inspired by Asha. thank you Asha, your inspiration is not limited upto cooking food now :).

Methi Matar with Yogurt and Entries for second day of Vegetable of the Week & Meme

Methi matar malai – a very famous curry in Punjabi menu at restuarants. In a restaurant here when I ordered it , it tasted sweet, sometimes though it is not sweet at other places too. I don’t like the taste of cream to my curry, I like cream only with milk shakes or soups. So I have developed my own way of preparing curry with methi and matar ,as I like both – Methi and Matar(fenugreek and Green peas) very much.
I add yogurt to it, this way it will not taste bitter, and will do good with the real taste of methi. Here is my way to prepare it.
Ingredients :
1 cup fresh green peas
1 bunch fresh methi (fenugreek ) leaves , chopped and washed thoroughly,
1 onion, 3-4 garlic cloves, 1 inch ginger,
2-3 green chillies,
Red chilli powder,
Salt to taste,
1/2 cup yogurt,
1 tsp Cumin seeds
A pinch of asfoetida ,
1 tsp oil.
Method:
Make fine paste of green chillies, ginger, garlic and onion.
Boil the green peas and keep it aside.
In a kadhai heat 1 tsp oil, add cumin seeds and a pinch of asafetida to it. Wnext add the paste of onion and other ingredients to it. Cook it until the paste turns golden brown.
Add finely chopped and washed thoroughly methi leaves to it.
Let it cook until all the water from methi evaporates completely, and add boiled Green peas to it. Next add ½ cup sour yogurt to it. Let it cook for a while and add salt and red chilli powder to it .When all the extra water from yogurt evaporates turn off the heat . Serve it Hot with Roti or Paratha.

Sra tagged me for this, and here are the secrets ......:)) ,
I did the job as a full time lecturer For MCA for about 4 years, which initially I choose as just to pass my time until I get other Job: D. But I really loved that once I started it. And I have many memories of that time to cherish. All my students of the first year of my teaching were older than me or of the same age of mine, but they never knew my real age : )) . And still don’t know : )) .
Funny side of me, I hate people who show off, and I just feel like to give them a hard punch on their face when I realise that they are just putting wrong effort in front of me to show off. If you have has seen movie “Jhankar beats”, I resemble to Rahul Bose in that movie : )) .
I love to know everything related to Aliens , funny Na! .Just that Imagination thrills me so much. I find it so interesting that when we got DVD of “Alien” Movie, with its all 4 parts , I saw 3 of it in a single day ! :D .
Deepak is not Gujarati, and we met only once before our Marriage.There is a long story about how I choose to marry Deepak,and I still feel that there is some telepathy between me and Deepak . More some other time.. :D .
I am not much demanding about having different dishes to eat, I can eat the same meal daily, I almost never complain about any food, as far as it is vegetarian and made with cleanliness , but when it comes to cooking , I find it too much boring to cook same dish every time . Even if I have the same ingredients, I love cooking it different way each time.

Royal Green Peas Curry & entries for First day Of vegetable of the Week -Green Peas & Meme

Royal Green Peas Curry ! - I dont why they call it this way , perhaps because it contains thick cream to serve it with :D.
This is what I made last week and shared with you all as Tricolored Curry( I still like that name ! ) Here is the easy and quick recipe for it.
Ingredients :
1 cup fresh green peas.
1 cup tomato puree or 2-3 finely chpped tomato ,
1 medium sized onion,
1 tsp ginger garlic paste ,
2 green chillies,
1/4 tsp garam masala,
1 tsp coriander- cumin powder,
1/2 tsp turmeric powder ,
1/2 tsp red chilli powder,
1 tsp oil,
salt to taste.
coriander leaves to garnish,
thick milk cream to decorate and serve with .
Method:
Chop onion , chillies and ginger - garlic , putthem in Mixture bown and grind them to fine paste.
Boil the green peas until they are soft. drain the water and keep them aside. In a kadhai take tsp oil and when it gets little warm add the onion, ginger, garlic and chilli paste to it,stir it , and cook it until the good aroma of onion fill your kitchen , it may take at most 1 minute.
Add tomato puree to it, if using chopped tomato then let it cook until it makes thick grave and then adjust water as per the desired thickness of gravy. take care to choose ripe juicy tomatoes for this .
Add green peas to it and then add turmeric powder, red chili powder, garam masala and coriander -cumin powder to it. Stir it well and then add salt. when cooked , turn off the heat and Serve when not so hot. ! while serving spread thick cream on it, and garnish with coriander leaves.
If you wish you can avoid using cream to this. I dont like cream much,I ate it without cream and that too was tasting delicios. The dish shown above went directly to Hubby ,as he is fond of Milk and milk products... as per him, this was tasting divine :D. Do try any way you like,this is a quick and tasty dish !

How my blog buddies look like ? A guessing game Meme ,Started my Sra and, I am tagged By Asha... I have some imaginary images of buddies whom I visit frequently or those who are in regular touch with me. ,somehow it happens with me always, if I know something just more than little about someone then also my mind prepares image of that person in my mind and whenever I talk about that person or interact with them indirectly I have their clear image in my mind. Let me start that intresting guessing game now, I choose it to present in alphabetical order. : )
I visualize Gattina as a highly energetic and creative person with cooking . I think she loves to cook different cuisines. And some how when I think of her , I feel she must be managing everything very well, Gattina do let me know wheather I am correct with my guessing about you or not?
I think of Pavani as a very good mannered girl, as she chooses her words quite nicely in the comment (not like me : ) ) ). Also she is very neat and nice with cooking new dish. I feel like she is a self contended girl. I don’t know why , but my mind visualize her as a fair skinned , long black haired girl , Is it true about you , Pavani ?
When I think of Supriya I guess, she is a young energetic lady managing well balance between job and home duties. When I think of her I think of Seema too, and I think Supriya, Seema and Soumya are somewhere in the relation , perhaps I think it b’coz they have a common designs on their blog wiht recipe pictures. This is just a guess, Am I wrong ladies?
Still I have different image of 3 of them in my mind. I think of Supriya as a very enthusiastic and fun loving girl .Supriya I think you might be making fun out of everything , and a happy go lucky person .
Seema seems to be a self contended person and kind hearted person .I can imagine her face with a loving smile on her face, though except smile I cant guess anything else about her.
Soumya sounds very much similar to Seema to me , I don’t know why ? :D . She must be of very much helping nature. The way she publishes posts about health related article with great effort , I imagine her to be like a kind hearted doctor. I think, I am very near to correct image of your, right Soumya ?
Sra feels like very nearer to my own image to me, though I keep on guessing of what age she can be ? :D . I imagine her with sort hair(that’s just b’coz the pic in her profile is like that : ) ) , and also full of life . and I think Sra must be happy in whatever she does in her life.
Image of Swapna in my mind is of a loving Mom whose world is all around the happiness of her daughter. She cooks very well, I find her creative with cooking.
It might seems funny , as I think Suma as a lady with long black hair. Along with that I think she has nice complexion and beautiful features. My mind portraits her as a very hardworking lady around my age( I don’t know why but many of you are of around my age , that’s what my mind thinks of : )) ) , who is giving her 100% in what ever she does. (Am I correct with guessing , Suma?)
Usha also seems like of my age. I think she is a cool person , and stay calm in any mood of life .(just a guess, Usha). Also She is much family oriented girl and loves being around her loved ones that’s what I come guessing about her from her posts.
Just moved to write about Vani , and I find that she already published her pictures. Thank God, I checked her blog. Otherwise it might have turn into a big joke on me , if I would have imagined her other way : )) ,
Vani , you are quite similar to what I thought about. Looking lovely in those pics. : )
Initially I used to mixed up with Vini and Vani , now I have their clear pictures in my mind. I see Vini, as a loving lady cooking with ease in her kitchen, with smile on her face and her daughter around, just by reading her posts ,this is what my mind visualize about her. : )
I have already seen picture of Asha,Coffee, Dilipbhai,Nandita, Nidhi,Trupti and Viji. Thus, I have a perfect picture of them in my mind. : )) , Still If I will go in detail, I see Trupti as a highly active lady , who is a good student, proud and nice mother of 2, and a good wife of course. ! The more I read about Asha, the more I feel that she has all good qualities of my Mom. That’s what I come to know from her Meme. Still she is quite young than her age ,and just like a lovely friend to me ! Asha I visualize you as a dynamic personality, who becomes child with child and talks with maturity with elders. :D.
Coffee is a also a fun loving girl and little notorious in my imagination, after Sra next is Coffee who resembles in my mind to my own image : )) , though I just saw her very little pic on gmail chat, I still remember that. : ) .

Check out what Suma of veggie platter has created for Republic day theme. She made this Tricolred Idli, for which she added shredded a carrot and green peas to it. Don't forget to check the pictures fo this process. Suma has really done well with this. : )
Anjali ,Who is participating here for the first time has made this heart shaped Carrot Halwa , and placed it in green bowl to be perfect entry for this theme : ) . Seems like all our buddies around here loves carrot very much , such that they don't miss a single chance to prepare something with carrot. And Being favorite among all is Carrot Halwa : )) . Its something nice about this event when we have more than 2 version of the same dish. : ) .
Asha is with her novel idea of cheese, to make Tri-Colored Spiced Cream Cheese . Also she made Ashok chakra with black peppers in the middle of it to bring out the image of our national flag perfectly. Just picture is enough to describe more about her and this dish. :) .
Manjula of dailtoy has made Triclored noodles to share here with . it looks simple ans superb ! Goes perfect with the theme .:)

A Tricolored Dosa -Simple dosa decorated with shredded carrot and spring onions. !
A simple and lovely Picture consisting of all three colors in it. : )
A dish of different colored chutney -
Orange - is made up of garlic , red chilli powder and a pinch of turmeric to it.
Green - is coriander chutney , I already posted recipe of it here.
White - its not a chutney , it's our all time favorite - plain curd.
Tricolored small Finger waffers(fried). I remember I love it as a child, and still I could find some of it in my home to make something perfect for this theme : )
Here I made Orange juice for the color of Orange .
White is my all time favorite - Buttermilk. (In Gujarati home there will not be a single meal served without buttermilk, and I just love it. : ) ) .
Green is the fresh Jaljeera (drink which helps in digestion/ can be served as appetizer) I made using Mint leaves. if someone intrested to knowthe recipe let me know, I will post it. :D.
Pasta made with baked Green peas and tomato puree - I think it also has good combination of all 3 colors, well correct me if I am wrong. :D
A side dish made up of raw papaya , green chillies and carrot ! This goes well when accompanied with any vegetarian main course and rice.

Hi Buddies, as the theme for this week is - Orange white & green, here is something from myside to participate with . Just to give you Idea. I know all of you are much good with making Dosa, here is slight twist to it, to make it perfect for Our theme -Republic day... Tricolored Dosa. Its a simple dosa decorated on one side with shredded carrot and spring onions. Some more are about to come from my side, along with all your delicious entries of yours . :D Well, another thing I want to remind you all is theme of this week is not limited to cooking only, you can participate here with anything with any or all of these 3 colors. Anything I mean, like say fruits/flowers/clothes... anything which gos perfect with this theme(no description is required for such matter, as we do with recipe of the dish ). I think we all have many option with that , since all of you have already proved that you are a Great cook , here is something more you can display too from yourside ,well that is truely optional and only if you wish then.
I am happy that some of you have allready contributed your recipe and I except others to send it as soon as possible, as I will do the round up on saturday here in India. Thursday &Friday is your day to send the entries and participate here with. I am gladly sharing the spirit of Our Republic day with all of you :) . Have fun creating colorful dishes and something else colorful too...
Entries for the Theme of the Week -Dried beans :)

Firt entry fot this week is from Trupti . She has sent me her delicious way of making Toor Dhokli. Such a neat idea. Just look at the pic above and you will rush for the recipe search here.
Here is her way to make this etirely new and healthy dish. In Trupti's own words...
Tuver-Dhokli:
1.5 cup Dried Tuver beans - soaked overnight, then cooked in the pressure cooker till soft (make sure to add some salt to it)
For the Dhokli:
1 cup wheat flour, 2 tbsp besan flour, turmeric, chili powder, Salt, a little bit of oil to bind, warm water.
3-4 cloves of Garlic- chopped, lemon juice, turmeric, chili powder and sugar to taste, jeera seeds and oil for the tempering.
Method:Make a stiff dough by adding all the ingredients to the flour. Make sure it isn't too soft. Set aside.After the tuver beans have been cooked thoroughly, heat some oil in a pan and add jeera seeds and the garlic. Add the cooked tuver to it along with the water that it was cooked in. Add some more water according to the kind of gravy you want, this shouldn't be too thick to begin with. Bring to a boil.Roll out the dough into a big circle and cut out small diamonds or squares. Drop these dhoklis one by one in the pan with the beans. Make sure to keep stirring to avoid the dhoklis from sticking to one another. Add the seasonings, taking care not to add too much salt. Cook until the dhoklis are soft...but not too soft. Serve hot with rice and yogurt or on its own. This is a delicious way to include some protein and fiber to your diet. Enjoy.

Theme of the Week- Orange ,White & Green

Theme of the week! Well, this week Friday falls on 26th Jan - Republic day of India. Being from the state of Gandhi bapu , I can never forget this day , and I truly want to celebrate this with all of you.
Read below for the theme of this week:
1. Cook anything with 3 colors of flag of India. (Orange , White and Green – you can cook dish finally resulting in any of these 3 colors / any single color / all of 3 , some variation in color of final dish is perfectly Ok . :)) For example visit to my steamed pulao having all 3 colors together...
2. Create anything having combination of 3 colors. i.e. you can just catch a picture of array of vegetables/birds/flowers having these 3 colors, or click anything else like say 3 scarves of these 3 colors, or anything you can imagine from your side.
I think this is a good chance for all of us to do something creatively. Just show up anything with our three basic colors Orange , White and Green. You can send any number of entry , like you can cook any number of dish, can show something else with 3 colors of Indian Flag, and show case anything else too. We will have many options really if we think about.
I, myself - is getting many ideas right now as I am writing about this just now. Your final day to send entries is Friday. After that I will do the round up for this week.
I am expecting something high for the first time from all of you buddies as I think we should value the Freedom we are gifted with and should have pride for the Matrubhumi we belongs to. Though we might be in different parts of this world, the fact remains unchanged that we all are Indians. Let us be together virtually this way and have something nice together.
My beloved Non-Indian friends are also welcome to be a part of this event and celebrate our spirit.

Sev Usal,Mix bean dry curry, Ghugharee and Pani Puri

Here I am , going to share some halthy and quick recipes with different beans ! Let me start with the one I like the most in these cold days! :)
Sev Usal is an official chaat dish at our home menu. Since I have not seen it anywhere else , I suppose that it is a kind of Gujarati chaat dish :D.
A quick, tasty and nice dish to serve in hot evenings. :)
Here is how I make it.
Ingredients For Sev Usal :
2 cups dry peas soaked over night,
1 potato peelied and cut into small cubes ,
2 tomatoes finely chopped,
2 onions finely chopped,
1 tsp garam masala,
¾ sp turmeric powder,
½ tsp red chilli powder,
1 tsp ginger –garlic paste,
1-2 tsp oil,
Salt to taste,
Pinch of asafetida
To serve :
Yougurt,
Coriander leaves, onion,
Tomato,
Tamarind chutney,
Sev,(made up of besan(Gram flour)).
Method:
Peel potato and cut it into small cubes. Pressure cook potato cubes and soaked peas together. The idea behind adding potato to it is to form thick gravy for this dish. Cook them until it is soft enough. And lightly mash it just like we do for Pau bhaji.
Chop onion and tomatoes and heat oil in a frying pan. Add ginger garlic paste and asafetida powder to it and next add onion. Let onion cook until they are golden brown. Then add tomato and let it cook until it turns into thick tomato gravy.
Now in add into this mashed peas and potatoes along with tamarind powder and 1 cup of water, let these all cook together until it forms a good mixture with thick gravy.(you can add water and cook it for few more minutes is it is too thick. )
Finally add red chilli powder, garam masala powder and salt to it. Cook for 1 minute and turn off the heat. Here our Usal is ready. This Usal also goes well with bread; we try it that way to for a change sometimes.
For a real way of making and serving Sev usal , first take usal in a snack dish(or in a bowl), garnish it with some chopped onion, tomato and coriander leaves, sprinkle some tamarind chutney on it. And finally add a spoon full of yogurt to it and sprinkle all over Sev . And hey, Don’t forget to add your love to it. :), Serve Hot and you will see your happiness reflecting in the eyes of the person in front of you happy :) .
Mix beans Dry curry :
As I thought when announcing this week to celebrate with beans, I was sure that some of you will come up with beans with tasty gravy in it, this is the way we all love beans to eat. And also I must agree that it is the way we all love to have beans in our meals. :)
Here is one more way of making its curry , just the variation is - it is dry. Just some beans sprouted together and a quick dish is here to made up with . Also healthy and prepared with less oil than for normal curry .
Ingredients:
2 cups sprouted beans( you can choose any or combination all you like ) ,
1 small tomatoes chopped,
1 small onion chopped,
3-4 garlic cloves, cut length or width wise,
1/2 tsp turmeric powder,
1 tsp red chilli powder,
Salt to taste,
1 tsp Lemon juice.
1 tsp cumin seeds,
1 tsp mustard seeds,
1 tsp oil.
Method:
Cut tomato and onion finely and keep it aside.
Take 1 tsp oil in a cooker, and add mustard seeds to it, when it starts spluttering, add cumin seeds to it. Next add garlic pieces. And immediately add onion and tomato. The pure of adding onion and tomato is just to bring little sweet and sour taste to this curry. Now add sprouted beans of your choice to it . Next add turmeric powder, red chilli powder , and salt to it. Add little water, just about ¼ cup to this and close the lid. Let it cook on low flame for about 3-4 minute, I normally cook it for one whistle.
This way beans will slightly increase in their size and will tastes good too.
Serve it hot with roti .
A quick and healthy meal for busy days is ready for you. :D.
Ghugharee:
Here is another Gujarati snack with black eyed beans(also called Moth beans, Matki in Marathi language and math in Gujarati).
This dish is attached with my memory such that even today the aroma of this dish drives my mind to my childhood days. When I was just 8-9 years, we all cousins get together at our native place “Morbi”, in our summer vacation. Normally we spend the entire vacation together and enjoyed a lot all the time, I have only 2 cousins younger than me all others are older than me 1 year older to even 9 years older. We all together were really having blast that time. Totally we all were 10-12 little bastards together were really creating chaos for all. May it be playing cricket and cracking some ones window :P or just playing cards together. Such energy and enthusiasm we had, starting from the morning till we sleep, we even never be at one place. Just having fun all the day was our motto :D, without knowing hunger ,skin burning sunlight or anything else. Our respected Grandpa was there at that time who was much caring about all of us. He always kept our wellness in his mind- like we all should eat ontime and do not run in skin burning sun lights outside etc etc…
In the after noon around 4 p.m when we just sit for a while Grandpa realize that we must all be hungry and at that time my beloved auntie was making this dish for all of us. Real Quick and tasty too. I know now why she prepared this, as she knew that we all must be very hungry and need some solid snack to eat. I remember all of us were finishing it in no time and were rushing to our game back :)) . That time we were not mature enough to remember to express our gratitude to auntie or Grandpa, now I realize it. So nice of them to do all these without expecting a word, their greatness and our childishness. May be some time today only I will call her and will thank her for being such nice to us.
Those were the golden days, never going to return to me, all of us are now settled somewhere busy with our own life and responsibilities. Grandpa passed away two year ago and I just have his wisdom and kindness to cherish now.
Well, here is a the real quick dish of “Ghugharee” .
Ingredients:
2 cup math(matki) soaked over night. ( here I used it sprouted) ,
2 tsp garlic minced with red chilli powder,
Salt to taste.
1 ½ tsp oil.
Method:
Get soaked Math ready . Here I used Sprouted one.
Heat oil in a pan , add garlic-red chilli powder paste to it when oil is little hot, take care that it should not get burnt . Immediately add soaked Math and mix it well cook for a while and turn off heat.
Serve hot as it is or just for a change with plain yogurt. A quick healthy snack for kids is ready .
Last but not the least- is favorite of all of us, as far as I remember. :D
Pani Puri : )
As I have posted this one earlier too, just check the process here. It requires to have Phudina(mint leaves), make the Mint water using the simple process here, and get boiled potatoes and sprouted Moong(Green gram) ready . Normally what is being used is soaked and then boiled black chick peas ,I find sprouted Moong little more healthy and tastier thats why normally I use it instead chick peas. Check it out here and enjoy it this weekend with family and friends. :) .

Pani Puri recipe - Pani Puris, also commonly called 'Gol gappas' by Indians can be bought from Indian supermarkets or chaat shops in bags ready to be filled.
Pani puri recipe
Ingredients :
Pani Puri ,
bean sprouts (I have used Moong dal here, should just begin to sprout) - (optional chick peas soaked over night) ,
3-4 potatoes, boiled and coarsely mashed,
For Pani
1 bunch of fresh mint leaves ,
1/2 bunch of coriander leaves,
salt to taste,2-3 green chillies,
3 tbsp pani poori masala,
1 tsp dry mango powder
For making Pani---
Grind the mint and coriander leaves & 4-5 green chillies into a paste. Mix pani puri masala in 2 litres of cold water.(If pani puri masala is not available, mix 1/4 tsp chilli powderr, 1 tsp cumin powder, 1 tsp kala namak, 1 tbsp tamarind pulp & a pinch of salt. ) Add mint and coriander paste and dry mango powder to it. mix well and adujust salt to taste.
For making Tamarind Pani---
Ingredients:
1/4 cups dates (khajur),
deseeded 1/4 cup tamarind (imli),
deseeded 1/4 cup jaggery (gud),
A pinch of asafoetida (hing)
Salt to taste
Method:
Wash the dates, tamarind and place them in a saucepan.
Also add the jaggery, asafoetida, salt, 1 cup of water and simmer for 20 to 25 minutes.
Cool and strain the mixture through a sieve.
For Masala---
Get sprouted Moong or preapre it at home the usual way. black Chick peas are normally used for making masal of pani puri ,but i usaully use sprouted beans in place of chick peas, as it tastes good, and healthier too. Such way instead of using soaked and boiled black chick peas one can directly use sprouted Moong too.
Add salt and chat masala to the potatoes and mix in the bean sprouts, if using. Make a hole on one side in each gol gappa, and fill it with a teaspoon of the potato mixture.
To eat, dip each gol gappa into the prepared Mint Pani(green water in picture) and enjoy the real taste of Pani puri . Use tmarind water too it you wish ti add some sweet taste to it. :)
Onions can also be added to enhanced the taste of it, though it is truely optional.

I have been not blogging this week , and know what? I have gathered so many things to share with all of you about this week only:) . Oh God, when this girl is going to stop ? If you are thinking so , then the answer is -Never . I really can't be quiet :)) .
Since I know that many of my blog buddies love henna designing , here is some treat for their eyes and for all of you tooo....
Just made this designs 3 days ago, grabed sister's hand and started designing. have fun with these. :D.
You know something ? When you love to do something you will get time for that ! doent matter how busy you are are what else is goin on in the life around :) . So never say that you don't have time for soing something. Just the fact is you haven't yet put that 'something' in your priority of using your time. :) . No no , I am not that much wise to learn this wisdom , My Mom told me everytime I used to say I dont have time for this and that. :P .
And here is the final result of my hard working :D.
Can't get the answer- what is most beautiful , my designing or sister's hand? if you get the answer to share it with me :) . I remember something like- Beauty lies in the eyes of beholder :) .
Remember,In Meme of 3 things I wrote photography as one of the things I love to do. May be I am very immature photographer yet :)), but I love to do that. "Practice makes a man perfect". (another slogan from Mom, oh so many wise things I learnt from her, and still learning :) ) , so I keep on practicing with that :P .

There were 2 rockets in the sky actually. And the view of sky is so clear that I just fell in love with this scene. Then at the middle the white fuel sign of the one rocket disappeared, I don't know why, it was still fying....just see the pic below to believe that.
And finally there was sign of only one in the sky .

When I joined my first job, I took an apartment on rent and was sharing it with another Colleague of mine, who finally turn into a good friend of mine. There was a huge temple next to our apartment, sharing a common wall with apartment. Since it was a famous Hanuman Temple there it always was more or less crowded ,and as it happens in India also there were some beggars around there. In the evening everyday they distribute food to hungry and needy people around . I knew this matter as my colleague- Anita told me this once.
Normally I got back to home around 7 p.m.. One day when I got back to home earlier than my normal schedule,I came to see the line of people there waiting for food to be served. Just watching them made me feel uneasiness. There were poor, thin and all aged people around there, waiting with hunger in their eyes. I saw this and couldn't eat my meal properly that day. What made me feel more uncomfortable is half of them were children, some were of 2-3 years age , didn't have even enough cloths to cover their bodies and protect themselves , some were little older than them. Some innocent faces ,starving to live on this earth. They might not be even aware of any other fact of life other than starving or serviving. I was lot disturbed, and thought what I could do for them .
Since serving anything directly to them was not possible, I inquired to Trust of people there in the temple, there was some fund we can donate them , which was being used for welfare of those poor people. Along with that myself and Anita, started distributing some biscuits and other readymade foods to children around there to just make them happy and see a smile on their faces. Sometimes I just bought some balloons and gave them to play with. The happiness in their eyes were worth catching in a picture. Unfortunately I didn't Had camera that time with me.
I continued doing so until I was there almost for a year or so. After that I got another job in another city, left that job. With new responsibility in new job and all other things to cop up with , I almost forgot the those incidents and got busy with my life, just as all of us are right now, some where with some responsibilities to perform, some duties to look after and everything else.
It is not always possible for us to go to such people and offer them some help, also it is hard to define some time priority for them to do any noble work. But it is for sure that if we feel like doing anything for such people we can do so. God never gives a Dream without giving the strength of fulfilling it. VKN of MYDhaba, has started the mission to do something to feed 1000 hungry children everyday named "Feed A Hungry Child". For which He planned to publish a book with some traditional recipes . He invited all of us to contribute for the book named "You can Cook ". I know all of you there are good with cooking , what we have to do is just to make some good traditional recipes and contribute to him for this noble cause. Just recall what our Mom/Grandma used to cook and make some of it and contribute them . I have never found a way easier than this to participate in any noble cause. What you have to do is just send as many recipes as you can . Target for that is 365 recipes, what he get up to date is around 100 , I request you to support for a noble cause and contribute as many recipes as you can . Provided they should be some traditional recipes, . Be there as a part of noble cause and somewhere in this world will be happy someday by your contribution. The final date to contribute is 31st Jan 2007. I hope it will be helpful to people, who are not yet aware of this Feed A hungry Child Campaign , to contribute something there.
Now something about an ongoing event here:) , after thinking a lot and changing my mind from one option to another one for choosing the Vegetable of the Next week, I am finally choosing Dried beans as Vegetable of the Next week. Since there is not one choice with it , I think all of us have many options to cook with different beans and participate here with . Showing you the pic here to remind you of many of forgotten dried beans... :)) . As there are more than one choice we have to cook with this week, we rather can call it Theme of the Week .
You can cook anything with these beans since there is a wide range and different dishes available with either soaked or sprouted beans,I think all of you would like this, and it would not be a problem for any of us residing in any part of the world, to get the beans, right?
I am going to change some plan of posting here, so for this week I will be posting all different dishes from myside on friday and also will do round up for all your entries on the same day.

Okra With Potato (Aloo Bhindi)

A simple and quick dish with okra, which is used as the main course in Indian dish .
My Loving Mom make it this way , here it is to share with you all :)
Ingredients:
Okra cut length wise into 1 inch length
The same quantity of Potato cut into strips of the same size.
7-8 garlic cloves, minced with red chili powder ,
½ tsp turmeric powder,
1 tsp cumin seeds (jeera) ,
1 tsp Mustard seeds ,
a pinch of Asafoetida,
Salt o taste,
Coriander leaves to garnish.
1 tsp oil.
Method :
First heat oil in a pan or kadhai , add mustard seeds to it, when it starts spluttering , add cumin seeds and asafetida powder to it.
Next add sliced potato, and sprinkle turmeric powder over it. Mix it well, and let it cook on medium heat till potato is tender , add minced garlic and red chilli powder to it. Stir well, and now add okra to it.
On the meduim to high flame keep on stirring it well. After a little while it will seem little greasy due to Okra, keep on stirring it, this will eventually burn all the stickiness of okra. At this stage the okra will reduce to half of the size of its original.
Okra with Potato is ready to serve with Hot Phulka with Ghee : ) .
I had it with ripe Mango Ras ( Juice ) . No , no I am not that much lucky to have ripe mango in market here ,at this time of winter. I stored it in my freezer when the season of ripe mango was on pick here. Here is a quick description of how to do it.
Take fine ripe Mangos, peel it ,and remove the pulp of each , then crush it together to make smooth pulp of it, without adding anything to it, Store it in a air tight container in your deep freezer . this way it will remain fresh for a long time, at least I am using it this way since last 6 months. And it tastes as good as fresh mango. At the time of taking it in use, leave it outside in normal temprature for atleast 2-3 hours , add sugar and little water to it and blend it together again. Your chilled Aam Ras ( Mango juice) is ready to serve with your normal dish. : ) .
At my place both of us love Aam Ras , so I store it in this way and enjoy it in any season here.It is really a great fun to have it in meal, and with Aloo bhindi, it tastes heavenly…. I know I know, that all you buddies from US of A is going to tell that you are missing it there , well, Soon we are also going to migrate there, and will be in your line soon , so let me Enjoy this "Fruit King Of India- Mango " while I am here. :)
The same Dish with okra ans potato can be made other way too, just by changing the way we cut potato and okra here. For that cut potato into small cubes, and okra in usual round shape. This will give it a new look. :) I tried it that way too before few weeks. Here is how it looked like.
Ghaaroda-My Diwali treat(my submission for VCC Q3 2006)

On this Diwali I decided to make something special for our guests and ourselves. As it is my common experience that on diwali normally when we visit our friends and relatives, we are welcomed by offering some sweet, which is either brought from market stores or made at home. and normally when we visit 2-3 friends we will be fed up by sweets, even though my hubby is likes sweets much, he never likes to have these much sweet items to swallow on the same day.... :)so I decided to make Gharoda for all who are visiting us, as it will be change for them too from regular sweet items, and as it can be prepared within 2-5 mins each, I also can spare much time for them to spend with. Also I thought that a hot served item will delight them in these little cool days here.
Ingredients:
1 cup rice -cooked ( I use Basmati rice)
1 1/2 cup Besan(chana dal flour)
2 meduim size onion chopped
1 capsicum chopped
1 /2 cup coriender leaves chopped
1 tsp red chilli powder
1/2 tsp turmeric powder
salt to taste
(sugar or jaggery if one likes it of sweet in taste)
Method:
First get besan in a bowl and then add water to make medium- thick paste of it. Next add cooked rice to it and then all the ingredients to it one by one and mix them well. Finally add red chilly powder, turmeric powder and salt in it(also add sugar or jaggery if u want to make it sweet in taste, I don’t have sweet tooth, so i don’t add jaggery normally ). Make sure that the whole of it should not be much thin or thick. It should be of medium thickness.(just as shown above)Now take a frying pen and put little oil on it. spread the raw material on it with the help of a big spoon or 'chamcha' .let it cook on one side on slow heat . turn the side when it turns to golden brown in color.(as shown in pic), if needed spread little oil from the side of it. (normally I don't need this, so I don't spread oil for second time, still it is cooking well, so why to use excessive oil :) )
When cooked on both sides, took off from stove, and serve hot with green chutney or tomato chutney or sauce. One can use this material for 1-2 days when stored in refrigerator. Just get it out before 5-10 mins . as it contains "Ajwain" it is good for health too, specially in these festival days when our tummy is loaded with sweet items :))

Aloo- methi

Winter is near, and vegetable stores are now full with fresh and green vegetable . I love this season b'coz it provide many option to people like me, who loves to prepare different kind of food every time. I came to see fresh fenugreek leaves(Methi) at store alst week and it was so fresh that i could not resist to buy it. As my hubby don't like little bitter taste of it, I decided to try it some other way. Here is how I made it with potato and one tomato in it. As just one tomato in it will change the whole bitterness of fenugreek into wonderful taste for this main course.
Ingredients:
2 medium sized potato cut into small cubes,
1 bunch of fenugreek leaves, cut and washed thoroughly ,
1 medium sized tomato,
3-4 flacks garlic -crushed,
½ tsp Cumin seeds,
¼ tsp mustard seeds,
¼ tsp turmeric powder,
½ tsp red chili powder,
Salt to taste
1 tsp oil,
Method:
Heat oil in a pan or kadhai and then add mustard seeds & cumin seeds. Add crushed garlic . When garlic turn little golden add potato cubes. cook it for 3-4 mins until it is tender. Next add turmeric powder to it and fenugreek leaves. Fenugreek leaves doesnt take much time to cook , just let it cook for 1-2 mins and then add tomato pieces to it. Mix it well with the all ingredients and finally add red chili powder. serve hot with chapati or roti.
It is very simple to make yet tasty. I love it coz it takes even less time to cook. :)
Yummy Undhiyu...!

Yummy Undhiyu...!
Today is something to share here , is one famous dish of Gujarat “Undhiyu”(people call it Undhiya or undhiyo too, but the real pronounciation is Undhiyu J ) - Un, the thought of which is not possible without Suran, though it is not the most part of that dish. That dish is incomplete without having suran in it.
Ingredients:
3 - 4 baby brinjals,6 -8 baby potatoes small,100 gms yam elephant( suran) , cut into medium sized cubes,
½ cup string beans (chauli dana),
½ cup lima beans (valore liva),
½ cup green peas (mutter)2 inch ginger,
6- 8 cloves garlic,
3-4 green chillies,1 cup coriander leaves,
1 tsp turmeric powder,a pinch asafetida,1 tsp Ajawain ,3-4 tsp oil .
For Muthiya :
1/4 cup besan
1/2 cup Fenugreek Leaves (methi), washed and chopped finely,
½ tsp red chili powder,
¼ tsp turmeric powder,
Salt to taste
Oil to deep fry
Method:
To prepare Methi na Muthiya :
Mix all the muthiya ingredients except oil and prepare a firm dough. Divide into small portions and shape each into one-inch long half-inch thick rolls. Deep fry in hot oil, remove and keep aside.
To make Undhiyu :
Peel off & wash potatoes & yam. Cut yam(suran) into medium sized cubes. Wash brinjals. slit brinjal and baby potato into four .
Make a paste of coriander leaves ,garlic, green chillies and ginger.
Pressure cook baby potatos, baby brinjals and lima beans and Suran in salted water. Do not boil much. Cook until soft.
Heat up oil in a thick-bottomed kadhai, mix in asafoetida and Ajwain. Add all boiled vegetables, green peas and string bean to it. Add little water to it, sprinkle salt and turmeric powder. Stir fry for five minutes on high flame heat. Pour out the green mixture of coriander leaves, garlic, ginger & green chillies . add half cup of water, cover and simmer (boil slowly at low temperature) on a very low heat up for 10-15 minutes.
Mix in fried muthiyas and again simmer (boil slowly at low temperature) for 15 minutes. Shake the vegetables occasionally but do not use a spoon to stir.
When water is totally eavaporated, remove from heat. Serve hot either as it is, or with puri or paratha.
Undhiyu is a very traditional recipe of Gujarat, and the way it can be prepared varies from region to region in Gujarat. I make it my way. :P . It is Normally prepared in most of the home On the festival of “Makar Sankrati” 0r “Uttarayan”(which falls on 14th January every year). It is almost accompanied by hot Kesar Jalebi…. Oh those good old days ,when we just have to fly kites at terrace since early morning to late evening, and had these delicious dish made by Mom at home to enjoy… : ) this year I am planning to visit my Mom on “Uttarayan” to have all those golden memories to share with hubby dear ! :)

One can also include broad beans (sem fali or surti papdi ) and pigeon beans (tuver lilva) for making undhiyu. Here I havent got any at this time in market. May be their season starts from late December. If using broad beans then cut them into long strips and boil it along with other vegetables . Pigeon beans should be added along with green peas at the time of making.
Salsa Verde with Maxican cutlets

Sharing here with You a Maxican dish - Maxican cutlets with salsa verde .
Ingredients :
For the cutlets
2 cup boiled and mashed potatoes
1 tsp corn flour
½ tsp pepper powder for the potatoes
1 cup kidney beans ,soaked, boiled and mashed.
¼ tsp pepper powder for the kidney beans
Chilli sauce
Oil for frying
Few spring onion leaves, chopped, to garnish
For the Salsa Verde
2 medium sized green tomatoes
2 green chillies,
2 tsp chopped coriander leaves,
1 small capsicum
1 tsp vinegar,
1 tsp sugar,
Salt to taste
1 tsp corn flour
Method:
For the Salsa Verde:
Blend all the ingredients together in a mixer.
Then put on the stove to warm. Stir often till the mixture turns thick like a sauce. Remove from the stove and cool to room temperature.
For the Cutlets:
Mix together mashed pototoes, corn flour, salt and pepper. Divide into 10 equal portions. Flatten each portion into 2 inch diameter circles. (Like thick puris.)
Mix together the mashed kidney beans, salt, pepper and chilli sauce .Divide into 5 eual portions. Flatten them into 1 ¾ inch diameter circles.
Sandwich a kidney bean puri between 2 potato puries. Seal the edges and shallow fry in oil. Make the other cutlets the similar way.
Arrange all the cutlets in a plate sprinkle chopped spring onion and apply Salsa Verde. Serve when cutlets are hot.

(One variation to this is to sprinkle cheese over cutlets and before serving cover the cutlets with a lid and warm them for 10 minutes till he cheese melts. )
Have been much busy this end, hence couldn't publish one dish with tomato yesterday which I have ready with me ,Just could not get the time to post it yeaterday . I think I need little break now ,otherwise next time I wll be sirfing your blogs from Hospital:)) . well, tomorrow I will post vegetable for the next week and I might change some planning to post here , like from daily to alternate day or somehting else. on the last day with tomato also I am not alone to publish my post here, we have two more buddies with us to share their recipes with tomato :) .
First is from Sandeepa from Bong Mom's cook book. She is sharing here here recipe of making Tomato Khajur canberry Chutney. this is a bengalu kind of chutney she made up with a twist of adding cnaberry to it. Really a tasty entry with tomatoes. Thank you Sandeepa for sharing this with us. :)
Second is Lakshmik from veggie cuisine, sharing here er own recipe of making baby Potato-cherry tomato with green peas gravy. Lovely picture of recipe and indeed a nice way of making this dish .Thanks Lakshmik for your timely preparation and efforts to publish this.
Tomato Paratha

Nice recipe of tomato Paratha - a healthy brunch dish to share here with you all today.
Ingredients:
3-4 big ripe tomatoes,
green chillies 3 crushed,
1/4 tsp methi(fenugreek) seeds powder ,
1/4 tsp mustard seeds powder ,
1 tsp red chilli powder,
sugar powdered ( optional),
1/4 tsp turmeric powder
salt to taste
Oil for frying.
Method :
Take a tawa add 1 tbls of oil , Add to it the cut tomatoes with turmeric and salt cook in a med.flame until it is well cooked . Add to it the crushed green chillie and red chillie powder and the methi-mustard powder with a pinch of sugar. Cook for couple of minutes more until the gravy becomes a thick jam consistency & the water is absorbed. Cool completely. Take the tomato paste in a bowl add to it 3/4 cup wheat flour and 1tbls of maida mix well without adding water. Only add water if required into a thick dough. Add salt if required.roll out as even size parathas. Heat tawa and cook it on both the sides until crisp just as shown in the process of Paratha. Serve hot with any raita.
I served it along with a quick side dish made up of carrot and green chillie.
