Ingredients:- Moong dal (whole) - 100 gms Channa dal - 50 gms Chopped tomato - 2 Chopped onion - 2 Cumin seeds - 1 tsp Chopped garlic - 1 tbsp Chopped ginger - 1 tbsp Red chili powder - 1 tbsp Garam masala powder - 1/2 tsp Butter - 1 tbsp Oil - 1 tbsp Salt as per taste
Preparation Method:-Wash and boil moong dal and channa dal with salt, chopped ginger and garlic in a pressure cooker till soft. Heat oil in a pan and add cumin seeds, let it crackle. Add chopped onions and cook till golden brown in color. Add ginger, garlic, finely chopped tomatoes and then add red chilli powder.Then add cooked dal to the mixture. Then add gram masala and salt to taste. Cook for 2-3 minutes. Add butter and cook for a minute. Garnish with fresh coriander leaves and serve hot with Roti, Naan and Rice.

Now mix the flour, spinach, salt, green chilli and 1 tbsp. oil . Add enough water to make a soft dough. Cover it and keep aside for few minutes. Then make small balls and roll them like parathas. Heat a tawa/pan and place the parantha over it. Turn it and spread some ghee round it. Turn again and spread some ghee on the other side too. Cook till both sides are evenly cooked. Serve this hot indian recipe with curd or chutney.

Add ginger/chilli paste, Tomato paste, turmeric powder, coriander powder, and chilli powder. Sauté for a minute. Add water and boil. When this gravy mixture has boiled for 2 minutes, add the koftas to it and keep boiling for few minutes with the lid covered. Open the lid and take out one kofta to check whether or not it has cooked properly till inside. Check the consistency of gravy. If it is too watery then make a thin paste of flour and cold water and put in the gravy continuously stirring, for thickening the gravy. If gravy is too thick, then add some boiling water to it and stir. Put off the flame when it is done. Garnish with fresh coriander leaves and serve hot with steaming rice or puris.

Rub the salt, turmeric, chilli and cumin on the chicken pieces and keep covered for 20-25 minutes. Heat the oil and add the onions. When the onions are golden brown, add the chicken pieces and fry in medium heat till the chicken is well done. Add the ground paste and fry till all the water evaporates and the mixture is dark green. Add the lemon juice and heat for 2-3 minutes. Add salt as per taste. You could also put 1/2 tsp of Ghee(Butter) if you like for good smell. Cook for few minute and you are all set to enjoy chicken hariyali. Serve hot Chicken Hariyali with rice and dal and some salads And enjoy the indian food.

Indian food recipe of Uttapam could be considered as indian recipe of medium level when considering the ease of cooking.
Uttapam is a very healthy south indian food which is eaten mostly in southern part of indian subcontinent. If you get a chance to visit hyderabad, bangalore, or Chennai or any other place in southern india, try out tasting uttapam.
Uttapam is taken mostly in breakfast as it is a light food. So, this forms another menu item for south indian breakfast. Other indian breakfast food menu items are Idli and Masala dosa.
Uttapam recipe ingredients (indian recipe)
Black gram lentils (Urad dal) - 1 cup
Raw rice or rice flour - 2 cups
Coriander leaves (chopped finely) - 2 tbsp
Green chillies (chopped finely) - 2-3
Ginger (chopped finely) - small piece
Onions (chopped finely) - 2
Oil
Salt to taste
Uttapam recipe preparation method (indian recipe)
Wash the rice and lentils seperately and seperately soak in water for about 5 hours. Blend both of them seperately into a smooth paste. The batter consistency should not be too watery, but it should be of pouring consistency. Mix both together and add the salt. Let it ferment for 12-14 hrs. Mix together the green chillies, onions, coriander and the onions in a small bowl. Keep aside. Rub some oil on a pan and heat it. When the pan is hot, pour some batter onto it. Using circular motions with the ladle, spread the batter to make a thick circle. Let it cook on the under side. Keep it cover so that it roasts well. Use medium heat or else the batter will burn. Now sprinkle some of the onion mixture on the top side and overturn the uttapam. Cook on the other side similiarly. When both sides are sufficiently roasted, lift it off the pan. Repeat for the rest of the batter. Eat Uttapam with or without coconut chutney.

Today I tried Paratha and cabbage potato fry. Cabbage potato fry goes well with Parathas. Earlier I had it with Rotis/puris, but didn't find the menu whole and exciting menu.

One medium size cabbage finely chopped
2-3 medium potatoes

Heat oil in a thick buttomed vessel. over medium heat. Add cumin seeds, mustard seeds and wait till they splutter. Then, add onion. Fry onion till turn golden brown. Add cabbage and fry till golden brown. Do not use water. Add turmeric powder, chilli powder, coriander powder and salt and mix it well. Let it cook for 10-15 minutes on medium heat. Keep watching in between. As soon as cabbage reduces in volume, add small pieces of diced potatoes and continue cooking on medium heat till potatoes soften and cabbage is tender (while stirring ocassionally). Serve hot cabbage potato fry with parathas. Cabbage potato fry and parathas could become the dinner menu.

Congratulations Mahesh Bhupathi for winning mixed doubles wimbledon 2005. He teamed up with Mary pierce of France. Mahesh Bhupathi won any title after three years. He won his last title, wimbledon mix doubles and US open mens doubles in 2002. We, Indians are proud of you.
By the way, did you get Mary Pierce taste Masala Dosa even once?:) Did she like having south indian food, masala dosa with sambhar and coconut chutney? As said in one of my earlier blog, the above mentioned are south indian breakfast food which is mostly eaten in souther indian states such as Tamil nadu, Karnataka, Kerela, Andhra Pradesh.
Indian food recipe of masala dosa, sambhar and coconut chutney are easy-to-cook indian recipes. They are also healthy food if we consider presence of onion, coconut in above food items. If you get to eat masala dosa in southern part of india, you would find its taste different from that cooked in northern india. In south indian restaurants, they use more salt in sambhar.

India has been declared as diabetic capital of the world. I think, it has to do with food habits of indian which involve eating sweets frequently. Also, intake of tea/coffee is really high for an average indian.
Diabetes is a very dangerous disease. In ayurveda, diabetes is called Ummul Amraz (Mother of Diseases). It leads to failure of various organs such as eyes, kidneys, nerves, heart and blood vessels. So, one has to crack diabetes by not only through medicine but also by controlling food habits. Read more on diabetes.
Bitter guard is one such vegetable which is an absolute kill for diabetes. If you really want to control diabetis, have 25 ml of bitter guard juice which is very difficult. Then, you could always have indian food of bitter guard fry which is easy-to-cook indian food recipe.

Mix Wheat flours gram flour, salt, chili powder, turmeric powder and fenugreek leaves(could make powder) and mix well.Rub oil into the flour. Add water and make a soft dough and keep it covered with damp cloth for 30 minutes. Take care while adding water.Knead well again the dough and make balls. Roll into a slightly thick chapaati than usual. Heat the girdle/pan and cook with or without oil. Note that Missi roti could also be cooked in an oven or tandoor. Serve the indian food of missi ki roti with sarso ka saag. I shall be giving indian recipe sarso ka saag soon.

Milk - 1 cup Coconut (shelled and grated) - 1Green cardamom - 2-3Ghee - 2 tbsp Sugar - 2 cups
Coconut Barfi recipe preparation Method:-
In a large pan, bring the milk and oil to a boil. Stir in the sugar and add the grated coconut and cardamom, stirring constantly for 6-8 minutes, until the coconut becomes thick and glazed and then remove from the heat. Lightly grease a medium size shallow pan and pour. Cool and cut the into square shaped pieces and serve this dessert recipe to your guests.

Kheer recipe ingredients:- 1 cup Basmati rice,1 cup condensed milk/or milkmaid - 1 tin 2 quarts fresh, whole milk 3/4 cup granulated sugarChopped nuts(almonds, cashewnuts) and cardamom powder pinch of saffron, cocconut dust.Kheer recipe preparation Method:-Wash rice and heat the milk in a open pan. When the milk comes to a boil add the rice. Boil the rice in the milk on a medium fire until the rice is completely done. Add condensed milk and cook for another some min., stirring continuously, until the kheer reaches a desired consistency. When it seems fully cooked, add the sugar, cocconut dust and stir till the sugar is dissolved and the mixture thickens. Remove from fire. Garnish with chopped nuts, cardamom powder and saffron. Beat the curd, make a thick batter using curd and warm water. Add few drops of yellow colour and cover. Keep aside in a warm place for few hours. Make a syrup with boiling water and the sugar and let it cool. Add cardamom powder in it. Put the batter in the bottle or bag and fry in hot ghee. Make 3 circles with the mixture to give the spherical shape like jalebi and fry in hot ghee. When the jalebis gets hard remove and put in sugar syrup. After a minutes remove from syrup. Rasgulla recipe ingredients:- Milk - 1 litre Plain flour (maida) - 2 tsp Lemon juice - 1 tbspSugar - 1 cup Water - 1 cup Cardamom powder - 1/4 tsp Rasgulla recipe preparation method:- Heat the milk in a pot until it starts to boil and add lemon juice to it. Stir slowly and gently until white curd forms on the surface and seperates out with water. Drain and sieve it well to remove all the water from the curd (chenna or paneer). Knead chenna to make a smooth dough. Add flour and knead again. Make small balls of equal size of the dough and keep aside. Make sugar syrup. Mix sugar and water in a pan and bring it to boil. Add chenna balls to the syrup and cook for 15 minutes with lid partially covered. Chenna dumplings will puff up. Just before removing from heat add cardamom powder. Remove kulfi from heat. Add rose water, almonds, pistachios and cardamom powder. Lightly roast the saffron and soak in a little milk. Add it to the Kulfi mixture and mix well. Keep aside to cool. Banana fritters preparation method:

Spring roll recipe preparation method:-Prepare filling for Spring roll : Heat oil in a pan. Add onions and fry till brown. Add all the vegetables,and cook till tender. Add salt, garam masala powder and black pepper powder. Do not add water. Remove from fire and keep aside.
Prepare Roll : Mash Potato with breadcrumbs or plain flour. Add butter and salt, make a smooth dough. Divide the mixture into four parts. Spread out a layer of potato dough. Spread vegetable mixture and then tomato sauce. Add grated paneer on top. Slowly roll the potato dough. Pack in an aluminum foil and steam bake (boil water in pressure cooker - keep a small container and steam the roll in it) for an hour without pressure/weight. Allow to cool, remove foil. NOTE : Use garam masala pwdr, coriander powder according to your spice levels. Whenever I do this type of curries or any biryani I prefer adding garam masala and coriander powder more when compared to red chilli powder.
Method:
KOFTAS :1.Mash the boiled potatoes and add grated paneer,heavy cream(2 tspoon)and all the ingredients one by one and mix them well.2.Make round shaped koftas (with this mixture) and deep fry these koftas to golden brown color.
Deep fried malai koftas
GRAVY :1.Heat Oil in a pan, and fry onions until translucent .2.Remove from fire and grind it into a paste. Set aside.3.Fry the chopped tomato and grind it into paste.4.Heat a tsp of oil, add red chilli, jeera and fry the onion paste(from step 1&2), Ginger garlic paste for 1 minute and add tomato puree and mix and cook until raw smell goes and starts thickening.At this stage, add garam masala powder,coriander powder,red chilli powder, salt and stir well.5.Grind the fried poppy seeds into a fine paste by adding sufficient water.Add this ground paste to gravy and mix well. 6.Cook til the gravy becomes thicken and add heavy cream.7.Add the deep fried koftas before serving.Serve with Biryani, Naan, Chapathi, roti telur,.. BREAD KATORI......
SALSAI usually cook together tomatoes, onions and green capsicum; I cook it like a salsa and use it for my pizzas, pastas and even for bread.Now!!! Some days back I got an ingenious idea I decided that I should make something more with the mixture which has finely chopped onions, tomatoes, capsicum lots of garlic and pepper powder cooked to form a lumpy mass.I cut my bread slice into a circle with a steel katori or bowl, and then put them in a muffin tray after dabbing a little butter on it.Bake them for about 10 mins till they are crisp on the exterior. Serve them with the salsa and the cheese grated on top as shown in the picture.
MOONG DAL DOSA......
I have prepared a moong dosa before, you will find the recipe here but this dosa is a little different, I feel dosa is a very versatile dish to be done, you can just change some of the ingredients and make it into a new dosa recipe altogether and I am always trying out new dosas as they are favorites in our house. The same goes for parathas you can make a parathas out of any and everything. I will be blogging various types of parathas in the future along with dosas off course.INGREDIENTS1 cup udad dal2 cup green moong dal1 or 11/2 cup rava /semolina.Add a paste of ginger, green chilies and coriander to this batter. [This is optional]Salt to taste.METHODSoak udad dal and green moong dal for about 5-6 hours or overnight if you are making this as a breakfast [you can even have it for dinner as its quite filling]Grind both together into a fine batterAdd the rava or semolina, add water and make the batter just enough thick.Keep this for 2 hours.You can make dosas but pouring the mixture in a circular motion on a hot griddle.Make the dosa a little thick so that you can turn it conveniently.Serve with ketchup, curds or green chutney if you do not add the optional items.MOONG DAL DOSA

It’s a nutritious vegetable like all other leafy vegetables I cook methi leaves in a form of dry and vegetable too, but today I will be posting about my favorite METHI PARATHAS.fenugreek leaves = holba = methi leaves Pronunciation: FEHN-yoo-greek Notes: This mildly bitter herb is believed to have medicinal properties. Dried leaves, either whole or ground, are called kasuri methi, and they're a good substitute for fresh. Look for fresh or dried leaves in Indian markets. Substitutes: celery leaves

METHI PARATHA'S
1 big bunch of methi leaves cleaned washed and finely chopped.3 cups of wheat flour1 tsp sugar2 tsp chili powder1 tsp haldi powder1 tsp garam masala powder1 tsp each of ginger and garlic paste2 tbsp sour curdsYou can put 1 tsp lemon juice or amchur powder1 tbsp oil or butter warmSalt to taste
METHOD
A very simple way of making quick parathasJust mix all the above ingredients together and make into a dough ballRest for about 1 hourRoll out into parathasFry with a little oil on a tava or griddle.Serve with a dollop of home made ghee or pickle.

THESE ARE THE BABY PIZZA'S THAT I MAKE FOR MY SON'S TIFFIN BOX.I usually make the topping at home i.e with lots and lots of tomato, onions and capsicum.The rest is the same, to make it more interesting i make some designs on them.

PIZZA......
My son loves pizzas i.e he likes everything that has cheese in it.This is a quick pizza for kids who are on a run and need something to bite into quick.....
I am just putting in the method as the ingredients are approximate.Take a ready made pizza base.smear it with equal amounts of tomato ketchup and red chilli sauce[you can make the mix and keep]chop onions , capsicum ,and tomatoes finely.crush them with your hands , you can put a little pepper powder or ajwain in the mixlayer them on the pizza basespread with a lot of cheese.bake in an oven till crisp and ready

I know this is a very very simple sandwich which you may all be wondering why i have blogged about ,but this is because i love this sandwich and i would like to share that with all my friends .each one of you must be having a different way of making an egg sandwich which i would definetly love to know.
This is the way i make my egg sandwich.
Take boiled egg and chopp it into pieces, add mayonnaise,and grated cheese to the eggs
add salt and pepper .
its ready to be eaten here you see that i ate it with brown wheat flour bread.

STIRFRY SANDWICH AND BHEL
I love stir-fries and I make it quite often for myself when I am hungry or when I don’t feel like eating the proper food of chapatti and sabji.One day as I was eating my stir-fried I thought why not make it a bit interesting, so that I get some revamped version for the same stir fry.So I made a nice sandwich which tasted really good by adding some grated cheese to the stir fry mixture and a mixed bhel which I feel everyone should try as it’s really healthy and fun to eat. STIR FRY BHEL
FOR MY STIR-FRY I USE.As everyone knows that its your own choice of vegetables for me this is the listCarrotsCabbageCapsicum,OnionsBroccoliBaby cornAnd red and yellow pepper sometime.The ingredients are used as per availability.
STIR FRY SANDWICHMethod is very simple take oil put freshly chopped garlic stir add the vegetables and then the onion so that it remains crisp stir fry on a high flame and finely add pepper and salt.I would love to have pieces of chicken or prawns too.
DAHI WADA....
Dahi wada is a very cooling dish and I usually make a lot of dahi wadas during the summer months .I usually make dahi wada for dinner by teaming it up with something spicy either bhel, sandwiches or batata wada.INGREDIENTSFor the wadas2 cups udad dal soaked for about 7-8 hourssalt to tastefor the dahitake 2 cups of dahi and churn a little till all lumps are broken don’t over do it.Add sandwich masala or chat masala which contains black salt,cumin,salt etcYou can add 1 tbsp ginger-chili paste (this is optional)Coriander finely chopped for garnishingChilli powder for garnishing.METHODGrind the udad dal to a fine and dry paste, do not add too much water.Add salt to itAnd fry the wadasAfter they are fried just put them in a bowl of warm water and let them stay there till they are served.Mix all the ingredients of the dahi or the yoghurt together.While serving , remove the wada from the warm water and squeeze it lightly .Take a bowl arrange the dahi wadas in it and then the spicied yoghurt is poured over it.Garnish it with coriander,chilli powder and sandwich masala

Presenting QUICKIES.There are times when we just have to make something in a hurry and there is no way out, so during such complicated or demanding times for a homemaker like me ,it becomes prerequisite that I have something which can be made in a jiffy .But off course there are certain ingredients that are a must for any Indian pantry, which will come to use when required.I am giving you recipes of such quickies which are very useful during times of need.INSTANT DOSAINGREDIENTS:1 cup rice flour1 cup fine semolina or rava1 cup sour curd11/2 tsp sugar or as per taste (some like it a bit sweet)for tempering--- 1 tsp oil1 tsp mustard seeds1 tsp jeera2 green chilies4-5 curry leave1 pinch asafetida or hingsalt to taste.METHOD:Mix together rice flour, rava and curds keep for 15 minsMake it to a flowing dosa batter consistency.Temper with the above ingredients.Take oil in a pan, put in jeera and mustard seeds let it splutter,Add hing , green chillies,curry leaves and then pour it on the aboveBatter.Add the required quantity of sugar.Take a non-stick griddle and pour this batter on it.It should be thick like a uttapamTurn and serve with a little ghee and green chutneyI WILL BE POSTING THE NEXT QUICKIE IN THE NEXT POST...

BESAN AND WHEAT FLOUR DOSA...
BESAN DOSA OR PANCAKE ON THE TAVAAll those who read my blog regularly must be knowing about my affinity towards making different types of dosa, sandwiches and parathas .I am always on a lookout for new dosa ideas as I feel that they are the most nutritious and filling breakfast or snack item that anyone can make and you can make innovations to suit your palate .Not all my trials have been successful , but I can proudly say that the success rate has been quite high.As I go on experimenting with my dosas I will be posting the good one’s for all my fellow blogger’s to cook and relish them at home.DOSA READYI found this recipe on Chandrika’s blog, I have made minor changes to suit my taste.INGREDIENTS:1 cup besan or chickpea flour½ cup whole wheat flourone onion finely chopped½ tsp jeera or cumin seedsfinely chopped green chillifinely chopped ginger a little¼ cup coriander finely chopped¼ tsp sugar1tbsp curdssalt to taste.
METHOD:Mix together all the ingredients in a bowl (you will need about 11/2 cups water)Mix till you get a dosa or pancake mix consistency.Let it stand for about ½ hour.Pour thick dosas on a griddle or tawaServe hot (this is very essential)You can smear a little ghee on top for added flavor.You can serve these with chutney, tomato ketchup or curds.
SABUDANA KHICHDI....
SABUDANA KHICHDIThis is a typical maharashtrians item and is made by marathi people almost every week and definetly on fasting days as it gives you all the required nutrition which one misses out due to the fast.INGREDIENTS2 cups sabudana or sago soaked for at least 6-7 hours (soak till the water just touches the top of the sabudana)Two small potatoes boiled and cut into small pieces½ cup roasted and coarsely pounded peanutsFor tempering:Jeera, hing, green chilies, curry leaves½ tsp sugar½ tsp lemon juiceFinely chopped coriander for garnishingGrated coconut for garnishing.METHODTake oil in a pan , when hot you can put jeera,hing , green chillies and curryleavesPut the soaked sabudana in this mix and stir for sometimeThe sabudana will turn from opaque to transparent.Then you can add the remaining things like boiled potato, chopped corianderPut sugar, salt and lemon juiceYou can garnish this ready khichdi with freshly grated coconut.

MIX FLOUR CARROT PARATHA
I always have all types of flours in my house, because I feel that when you have these at home sudden quests do not frighten you. I make lot of things with various flours, the basic being the maharashtrians “bhakri” which I cannot make the way the older generation does. But I have invented my own way of making bhakri and that is mixing wheat flour with any flour like nachini, jowar, bajri or makai and roll out think chapattis and let them puff up on the gas stove. Bhakri is served with a dollop of ghee on top.Today I made CARROT MIX FLOUR PARATHA to send as my entry for JFI # 4INGREDIENTS:Two cups finely grated carrots.One-cup wheat flourOne-cup bajri flourOne-cup jowar flourOne-cup rice flour1 tsp ginger-garlic paste1 tsp chili powder½ tsp haldi powder1 tsp dhania jeera powder½ tsp sugar1 tsp amchur powder or lemon juiceYou can add finely chopped coriander or kasuri methi this is optional1 tbsp ghee or oilsalt to taste.METHODThis is a very simple parathaMix all the ingredients together add minimum water for kneading the flour mix, as carrots leave water, which can make the dough soggy.You can add more oil while kneading.Make balls roll into a parathaCook on a hot tavaServe with garlic chutney and dahi.

GAJAR KOSHAMBIR.....
CARROT KOSHAMBHIR…Today I am posting a very simple recipe, which I think many of you must be making but I am posting it because it is my favorite salad and because the photographs look so good, I love the orange hue that is around the photo and it gives certain brightness to the dish.I would also love to know from my fellow readers as to how they make carrot raita, salad or koshambhir as we call it in Maharashtra.ING:2 cups grated carrots1tsp gheeMustard seedsJeeraHingTwo green chiliesCurry leavesCoriander chopped½ tsp sugar.1 tsp lemon juiceFreshly grated coconut for garnishing
METHOD;§ Grate carrots with a fine grater§ I do not squeeze out the water as I feel that the nutrients are lost if I do so.§ Take ghee in a pan when hot put oil, put in mustard seeds let them splutter, add jeera, hing, green chillies, curry leaves and stir.§ Pour this mix on the grated carrots add lemon juice, salt sugar, and mix§ Add freshly grated coconut at the end as a garnish along with finely chopped coriander leaves, which are optional.

SIMPLE RAVA DOSA...
I want to share a recipe of dosa with you, it is a very easy dosa to make and the fermentation time is only about 4-6 hours so, you can have a dosa whenever you feel like.Earlier dosas were made by fermenting them for a long time i.e. soaking before grinding and fermenting after grinding, so we had to wait for a whole day before we had the first morsel; now dosas are becoming very fancy and are made with variety of ingredients. BREAD ROLLIn my earlier post, I have written about sandwiches and how versatile they are.Here is a recipe, which is my own.ING:Long bread rollsFour potatoes boiled and mashedGinger garlic green chili paste as per tasteFinely chopped coriander or kasuri methi1 tsp garam masala powderBreadcrumbs for coatingOne egg for final coating.½ tsp lemon juiceSalt to taste.METHODMash boiled potatoes add the rest of the ingredients excluding breadcrumbs and eggs.If you have a bread roll make an elongated roll, if you have, burger buns make a cutlet or a tikki.Roll this cutlet in breadcrumbsDip this cutlet in a well-beaten egg, in which a little salt has been added.Shallow fry on a tava or griddle.You will get a nice lacy cutletYou can use whatever you please for the accomplishments with the bread roll, I did not use anything this time i.e. when I clicked this photos but I use carrot, cabbage mixed with mayo or carrot, cabbage with a Italian dressing or carrot, cabbage, onions with lemon and salt.Therefore, you can do what you please or just eat it as it is, as I said sandwiches are very versatile, changes can be made according to likes and dislikes of individuals.This is a filling, healthy sandwich which kids can easily have you can add boiled vegetables to the cutlets for increasing nutrition, and it becomes a complete meal.
SOYA CUTLET SANDWICHI believe in making food as nutritious as possible and so I try to find things or ingredients, which make the regular food more nutritious.Yesterday I wanted to make something with the Soya granules that I purchased from the supermarket, if you make a dish only out of the granules they have a peculiar taste which non of us in the house like much so I decided to make Soya cutlets and see if I could mask the taste of Soya granules which I don’t much appreciate. But this I kept this from my family, as I wanted to just give these hot cutlets and make them guess what went into it.And guess what I was successful in masking the peculiar taste they were very happy with the cutlets,Nutritious Soya cutlets.1.1/2 cup Soya granules treated as per instructions on the box2. 3 medium potatoes boiled and mashed.3. Ginger, greenchillies, coriander to be ground into a fine paste.4. Haldi powder a little, lemon juice and salt5. Mix all the above ingredients and form cutlets6. Before frying roll them in rava or semolina7. Shallow fry and brown on both sidesYou can serve these with toasted bread, I use wheat bread to make it healthier or you can serve it with plain ketchup.SOYA-ALOO-MUTTER PULAO
The soya-aloo cutlets turned out so tasty that it gave me great encouragement to try soya granules in a different way. So the next day I did soya-aloo-mutter pulao with biryani masala and it too tasted delicious and the best thing is that we got our daily quota of proteins.ING:11/2-cup basmati rice½ cup Soya granules (increase the quantity if you like)2 medium chopped onions.1 small tomato finely chopped.1 tsp ginger garlic pasteChili powder as per taste1 tsp haldi powder1tsp biryani masalaHalf lemon juice2 cubed potatoes.1-cup mutter or peasMETHOD1.heat oil put in chopped onion, ginger-garlic-paste2.once it becomes soft add the tomatoes3. Treat the Soya granules as indicated on the box.
4.add the soya granules, cubed potatoes , and peas5. add biryani masala powder , chilli powder and haldi powder6.let the vegetable cook7.add the washed and dried rice.8. add double the quantity water i.e. 3 cups of water9 add lots of chopped coriander10 cook and serve with dahi

TOKRI CHAAT
This is a favorite dish in my family , this is something must that has to be done when my sons cousins come visiting this is one of the first in the list of things of "must do...".
Here i am giving you the recipe and the ingredients together as all the things used should be used as per each persons requirement there is no fixed amount to be used some like it khatta and some like it meetha so you see......
So here is my chatpatta favorite which has its own crunch and colour which adds colour to my culinary world...
METHOD:
Take one packet ready made tokris3-4 boiled and mashed potatoes to which you add salt, bhelpuri masala or sandwich masala and lemon juice.Cook whole moong which were soaked for about 7-8 hours.Take khari bundi as per requirement.I do not make 2 separate chutneys for my chaats as we prefer to have a medium tikkha chutney.For the chutney I use, Dates, tamarind pulp, jaggery, jeera, salt, ginger, green chilies, coriander, and chilli powder too.[I have not given the exact amount because each one can make the chutney as per requirement, as in chaat items the requirements differ from person to person.]Take finely chopped tomatoes, and onions.You will need barik shev to garnish on top and if required more coriander.In the tokris you have to arrange the tokri , then the mashed potatoes, moong, chutneys , onions, tomato, and shev.You can add sweet dahi if you like to make it more filling and nutritious.
You can also sprinkle on top bhelpuri or chat masala.ENJOY!!!!!!

CABBAGE ZUNKA-www.onehotstove.blogspot.comMy son insisted that I bake a banana cake for him and I did not know what to do, as he rarely ever demands anything for himself and with the bird flu scare everywhere in Maharashtra a state in India where I stay, I did not want to use eggs for baking a cake (I had baked a banana cake couple of years back which had eggs in it).So the next thing I did was to go to my favorite blogs where I knew I had read a recipe ofBanana muffins and I found it at saffron hut’s blog.So this is my token of appreciation for the most delicious BANANA MUFFINS that I have tasted in recent times.The recipe which I have used is exactly as per given but I substituted walnuts with almonds as they were readily available.

Today for lunch I planned to do a vegetable dish from one of my favorite blogs as I had got great success with the banana muffins I was really charged…So I tried cabbage zunka from nupurs site “ one hot stove” and it came out really very very well and tasty.Pls try it.

NUTRITIOUS SANDWICHESAfter the nutritious soup here I have a nutritious sandwich.I am sure many of you must have made this sandwich before but I am giving you my version as I feel the same dish made with the same ingredients need not taste the same but always almost tastes different..INGREDIENTS:All ingredients cabbage, carrots, capsicum are finely sliced.You can add shredded chicken or boiled egg to this mix if you like it different.1 tsp pepper powderRequired amount of mayonnaise,Shredded cheese cubes.Brown bread slices. And butter for making slices crisp.METHOD:Take all the ingredients in a bowl and add mayonnaise,cheese,pepper powder, apply it on the bread slice which has been toasted with a little butter.I always use wheat bread to increase the nutritional value of the sandwich.

SUPER COOL SUMMER SALADI call this salad super cool salad because it’s really very very refreshing and cool. I usually make this salad not only in summer, when it is more frequent. but also with spicy dishes. nutritious clear soup......
CLEAR VEGETABLE SOUPThis is the simplest soup that one can make and I love to make it as it is packed with nutrients there is nothing in it that should not be eaten so you can pack in as much as you like for your kids. My son loves soups and this is my trick to put in as many veggies as possible as he is not a salad person so in goes my salad into the soup. My son says “ its not a soup it’s a vegetable”. But being a hard-core clear soup fan does not protest for too long.INGREDIENTS:1 tsp butter1 cup boiled corns or you can use a tin of sweet corn (but by using sweet corn tin the clarity and the consistency of the soup changes and you get a sweetish taste so it is best to use corn removed from the cob)½ cup each finely sliced cabbage, carrotsLittle finely sliced capsicum (optional).One finely sliced onion.1 vegetable soup cube.Sugar, salt and pepper as per taste.METHOD:Take butter in a panSoften the onion and add the veggies all together including the boiled corn.Let the whole thing cook for at least 15 mins on the stove.Add the veg soup cube.Add pepper powder, a little about ½ tsp sugar and salt to taste.Make it watery by adding water.you can add coriander if you like the taste I do not add coriander.Enjoy!!!!!!! your soup nice and hot, with fried crotons if you like.

This is my contribution towards your monthly event RASOI # 4Your topic is FUSION, which I thought was very interesting I am a new blogger and this is my first participation in any event. I like this idea of having events it makes us food lovers think and think so much about food in order to get the idea together . I too have come up with this tasty recipe and after tasting it when I made it today I am very happy with the result and will see that it is on the list of my next party menu thanks for making me come out with such a interesting recipe so from this you know that anything is possible when you put your mind to it.Here is my recipe its called.ALOO TIKKI-PASTA MASALAIng:Take 4 medium sized potatoes boiled and mashed.Little jeera, haldi, chilli for the cutlets or tikkis2 medium big onions finely chopped1 tsp ginger garlic paste4 big tomatoes finely chopped½ tsp haldi powder,1 tsp chilli powder- if you like it more hot pls put more chilli ,1 tsp everest pav-bhaji masala1 tsp dhania jeera powder (less if you don’t like it)salt a little sugar and lots of coriander to garnish.1 cup macaroni pasta.METHOD:For the aloo tikkis:1. Add chilli powder, haldi powder and jeera powder (if you have) to the mashed potatoes, with a little salt.2. Make small balls and flatten. Shallow fry on a hot tawa with a little oil.For the pasta masala:1. Add onions to the oil, let it become soft, and then add the ginger garlic paste.2. add finely chopped tomatoes cook till they become soft. After that add chilli powder, haldi powder, pav bhaji masala and stir for sometime.3. Add a little i.e. ¼ tsp sugar for balancing the flavours.4. Garnish with a lot of finely chopped coriander leaves.5. Keep water to boil. To the boiling water add little salt and oil and cook your 1-cup macaroni pasta in it.6. Once the pasta is cooked put it in the above gravy and here you have the indianized pasta masala.Serve as shown in the picture .

Here I am giving you a recipe of my favorite salad.ROASTED CORN SALADThis salad is very simple to make and very tasty too.Roast whole sweet corn on the gas stove till you get black spots on it.Remove the corn kernels with a knifeAdd the finely chopped tomatoes, onions, cucumber, capsicum, coriander and green chilies to it.Half tsp of lemon juice.Add salt as per taste.Eat with pulao or with any other rice preparation.
CORN:Corn is the most abundant grain crop; worldwide , it is exceeded only by wheat as a cereal grain. Most of the corn is grown in the united states and Canada. Sweet corn , which is harvested while still immature, is the type consumed as a vegetable.
CORN AND NUTRITION:Corn is high in starch and protein but not a suitable protein substitute due to lack of amino acids.It is a good source of fibre too .-(source food harms food heals)POP-CORN: Air popped unbuttered popcorn is low in calories and very high in fiber.one cup of pop-corn contains only 30 cals making it an ideal high fiber snack.

Hash Browns ( My Entry to Jhiva for Ingredients)
Oh God ! I have probably missed this event. But Vaishali being the kind soul that she is will consider my late entry and let me be part of this event. I even got a book from the library which has 100 recipes only with potato as the main ingredient. I have had it now for 3 weeks but I managed to open it only today . There are some really scrumptious recipes in there, but the one which appealed to me is this simple one of Hash Browns which I just love to eat. Till now I had eaten only the store bought variety which are good no doubt , but today I made them at home for the first time and they were delicious. Do try them out and have them as part of a typical english breakfast or just as a tea-time snack . Anyway you eat it they are yummy. Now without any further delay I'll get down to the recipe.
I used:
2 large potatoes (peeled, par-boiled and grated)
3 tblspns oil,
1 small onion finely chopped,
salt and pepper to season,
dried parsley or fresh chopped chives to garnish.
What I did with all these:
1. Heat the oil in a heavy-bottom frying pan. When the pan is very hot spread the grated potatoes evenly into the pan. Press the potatoes down gently.
2.Spread the chopped onion evenly over the potatoes and cook over a medium heat.
3. Season generously with salt and pepper,
4. When the potatoes are browned from underneath make sections by cutting through with a pizza cutter or a sharp knife.
5. Turn over the hash in sections and cook again until the other side gets crispy and brown too.
6. Garnish with chopped chives or parsley and serve hot with loads of tomato ketchup.
Well thats all there is to it. Easy ,isn't it? And that below is the book from which I followed

Dosa, Sambar and Strawberry Cheese Cups
These are my entries for this month's AFAM(strawberry cheese cups) by Maheshwari and Pooja's valentine's special. You may wonder what Dosa and Sambar has to do with Strawberry cheese cups...Yes this is what I made specially for my husband. Dosa and sambar is my husband's all time favourite. He can have it without any complaints for breakfast,dinner and even lunch. He doesn't like many desserts... doesn't eat icecream ,almost all sweets ... I had made these strawberry cheese cups before and he liked it . As I wanted to make a really nice dessert for him, I chose this one. Though the menu sounds extreme, I wanted to make only this because this is SPECIALLY FOR HIM!!!!!Dosa
IngredientsIdly rice- 3 cupsUrad dal- 1 cupMethi seeds- 1/2 tspsalt to tasteMethodWash and soak rice and Dal+methi seeds seperately. soak for atleast 4 hours. Grind dal in to a fine past by adding water little by little . Then grind rice into a fine paste and mix it with dal .Add salt to taste and ferment it for abt 8 hours or overnight.(It may take a longer time in winter)Sambar Ingredients For sambar powderRed chillies- 2 to 2 1/2 cupsCoriander seeds- 2 cupsBengal gram dal- 1/4 cupThoor dal- 1/4 cupPepper- 3 tspFenugreek- 2 tspJeera- 3 tspCurry leaves- a fewDry roast all these seperately and powder.Thoor dal- 1 cupgreen chillies- 5 slicedgarlic- 5 clovestomato- 1 choppedpearl onions- a few( u can use one chopped big onion too)methi seeds- 1/4 tspturmeric powder- 1/4 tspHing- littleTamarind juice- from small lime sized ballVeggies of ur choice- (carrots, brinjal, drumsticks... etc)1/2 cupFor SeasoningMustard seeds- 1/4 tspred chillies-1hing- littlejeera-1/4 tsppepper- 4 to 5methi seeds- less than 1/4 tspcurry leaves- a fewcoriander leaves- a fewOil - 3 tspsalt to tasteMethodWash 1 cup of dal and add greenchillies, garlic,turmeric powder, hing, methi seeds, tomatoes in one bowl and the veggies in another bowl and pressure cook this .Heat oil in a pan add mustard seeds , when it splutters add the other ingredients for seasoning and then the onions . Saute till the onions are transparent . Add the tamarind juice and 1 to 2 tsp of sambar powder. now add the cooked dal (mash it well with a ladle) and the cooked vegetables. Add enough water and salt to it.simmer it and close it with a lid for 10 mins. garnish with chopped coriander leaves. Sambar is ready. Serve hot with dosa,idly or rice.

Sometimes when I grind sambar powder I was not able to get good colour cos of the red chillies. so I reduced the amt of chillies (10 ) and prepare powder. Then when making sambar I add 1 tsp of readymade sambar powder(i use shakti masala) and 1 tsp of the sambar powder which I made.By this way I get good colour for sambar.
Strawberry cheese cups
Actually I found this recipe for the cups, in the Pepperidgefarm puff,pastry sheet packet . They had printed a recipe for choc peanut butter cups and I replaced it with creamcheese filling.. Crispy puff and creamcheese was real Yumm!!Ingredients pepperidge farm's puff pastry sheetscream cheese-1/2 cuppowdered sugar-1/4 cup or to tasteheavy cream- 2 tbspstrawberries- a few(slitted half)MethodThaw the pastry sheet at room temperature 40 min. Preheat the oven to 400F.Unfold the pastry on the lightly floured surface , roll it and cut into 4" squares approx.Press the squares in the muffin pans. Bake for 12 minutes or until golden brown.Mix sugar, creamcheese and cream together and beat well till u get a smooth texture.Place the cream in the puff cups and then a piece of strawberry on top.
About Valentines day... Though we knew what is valentine's day in our schooldays we didn't celebrate it or bother about it much.There was an 'Archie's gallery' opposite to my college and it used to sell wonderful valentine cards. That's how I got a better picture of valentine's day . Me and my husband had exchanged valentine cards only in the first year of marriage as feb 14 was only one week after our wedding. After that we don't care much for V'day because I feel that if u want to epress ur love to someone u can do it anytime, not only on v' day.
And now about my Husband.. His Name is Sundar.. He is a person who doesn't talk much while on the other hand I talk a lot...(I think in these 7 yrs it has reduced a bit ). He is a very patient guy while Iam not.Though we are chalk and cheese in some aspects there are a lot of other aspects where we have similar tastes too, and all these makes life interesting... He has stood beside me during some of the hard times in my life and I can never forget that. In short, He is a real gem of a person(My Husband who sitting near me ,reading this gave a big,broad smile )Happy Valentine's day!!!

Pedas
Today is our 7th Wedding Aniversary and I thought I would begin the day with sweets. So yesterday I made these lovely pedas. They are very easy and quick to make.My 5 year old little daughter helped me and we had fun making this..
This is my entry for Trupti's ' Little Chefs in the kitchen' Event and Meeta's 'Monthly Mingle- Sweet love'. Though it may be a bit late for the Sweet love event,but I thought will be nice to post this on my Wedding day which would surely be the best day to show the love I have for my Better half. Happy Valentine's Day!!!
Ingredients
Sweetened condensed milk(whole milk)- 1 tin
milk powder- 2 cups
butter-2 tbsp
crushed pistas and almonds- a few
food colour(optional)- any colour u like
silver warq- optional
cardomom powder- a pinch
Method
In a microwave bowl add the butter and heat it for 2 mins or till it is melted.
Add the milk powder and condensed milk, mix it well and microwave it for 2 minutes.
Add the cardomom powder and food colour at this stage and microwave for 4 minutes , taking out and stirring after 2 minutes.
Cool it completely and make pedas of ur desired shape.
Add crushed nuts on the top of the pedas and press it. Apply the silver warq.
note
For shaping the pedas take a lid from a small bottle, keep a few nuts inside and place a ball of pedas on it. press well and invert it. U will get lovely round pedas.

Cheese sticks
I made these cheese sticks while we were watching superbowl last sunday. My Daughter loves these cheese sticks and I always buy it from the frozen section. She was asking for cheese sticks last weekend and I didn't have it in the freezer.... So I thought 'Let me check out for the ingredients and if I have them at home I can do it '. I googled for cheese sticks and got many recipes for that.. I will give u the method by which I made. This is my entry for coffee's MBP.
Ingredientsmozarella cheese- 1 pkPancake mix-1/2 cupcornstarch- 1 tsppaprika- 1/2 tspbread crumbs/ flavoured bread crumbs- 1cupsalt to tasteoil for deep fryingMethod
Slice the cheese to thick fingers(if u slice it thin it will melt fast)Mix pancake mix, cornstarch, paprika and salt together in a bowl and add milk/water to form a thick paste.Dip the cheese in the pancake batter , roll in the breadcrumbs and then again in the batter and finally in the crumbs again and deep fry in hot oil.(u have to do it twice so that the coating is strong)Fry for one or two mins till both sides turn golden brown and serve hot with tomato sauce.NoteThe original recipe had eggs in it ..I did not use it but I strongly feel that if u dip the cheese in eggs , the coating will be more strong.If using eggs beat an egg or two in a seperate bowl, dip first in the batter, then egg and finally the bread crumbs.The recipe said to use flavoured breadcrumbs.. I had some flavoured croutons and I just grinded it and used.. It was good.U can substitute the pancakemix with flour and cornmeal.

Rasmalai
Spongy Rasmalai is one of my favourite desert. There are many ways of making rasmalai and lots of my fellow bloggers have blogged rasmalai. This is my way of doing it. I use readymade rasagullas for making rasmalai as this is an easy way to do it.
Ingredients
Full cream milk- 1.5 ltrs
Sugar-150 gms
Haldirams Rasagullas- 1 tin
pistachios- a few crushed
yellow food colour(optional)
saffron- a few strands
Method
Boil the milk in a thick bottomed pan or kadai. when the milk is hot ,take a tbsp of it and soak the saffron strands in it. Add the crushed pistachios to it.
Reduce the flame and stir in between till the amount of the milk reduces to half.
Squeeze out the juice from all the rasagullas and flatten it with ur hands.
Add the sugar ,food colour, stir it and add the rasagullas and saffron soaked milk. Remove from heat after 2 minutes. Refeigerate and serve chilled

Pin wheel sandwiches
Happy Republic day!!...I got this recipe from a book called 'Pulsuvai Malar'. I wanted to try these for a long time ... and when i saw the theme for this week in Pooja's blog I thought this would be the perfect time to try this out. This is my submission to pooja's Republic Day Event.IngredientsWhite sandwich Bread -1/2 packbutter spreadgreen chutneyTomato chutney or tomato sauce
MethodTake three slices of bread , trim the edges and flatten it with the help of a rolling pin. Apply tomato chutney or tomato sauce to one slice , apply green chutney to another and apply butter to the third slice.
Place the green slice on the bottom,then place the buttered slice on top of it and finally the red one.Very slightly wet the bottom slice with little water and fold it twice(like u are rolling a paper).
Then cut it into rounds. u will get lovely , colourful pin wheel sandwiches.NoteIf u have unsliced bread it will be more easy to make these sandwiches.For the green chutney - add 3 tsp of oil in a pan and add mustard seeds,uraddal, curry leaves, 3 green chilli slits, 1"piece of chopped ginger, 1 clove garlic chopped, 1"piece of tamarind and cleaned and chopped 1 bunch coriander leaves. saute for some time and then grind to a fine paste with salt. u can use 1/2 bunch of corianderleaves and 1/2 bunch of mint leaves too.

Aval Payasam
Blogger friends recipe (BFR)#2Aval payasamA few months in blogging, I have learnt a lot in cooking from my blogger friends. I have tried a few recipes from them and feel really happy to say that almost all of them were succesful. Here is one such recipe ... .I wanted to make Aval payasam for a long time and when I saw this recipe in My dhaba ,I decided to try it out for Saraswathi Pooja. This is the first time Iam making Aval Payasam , and believe me it tasted divine...Thanks VK Narayan for the lovely recipe.Click for the recipe Here...I made this by following the exact recipe of My dhaba's... But as i did not have saffron with me I just added a pinch of yellow food colour.. This is a great recipe and You will surely love it.

Aloo Curry
This is the usual aloo curry. Most of you all will be familiar with this. I love this dish very much as it is simple to make and tastes great..This goes well with vegetable biriyani ,Rice and sambar, rasam , dhal etc…here goes the recipeIngredientsPotatoes- 5Onions - 1 large chopped finelyGarlic- 5 cloves or garlic paste- 1 ½ tspChilli powder- 1tspTurmeric powder- ¼ tspGaram masala -½ tspMustard seeds- ¼ tspCurry leaves- 1 sprigCoriander leaves- 2 tsp finely choppedOil - 4 tspSalt to tasteMethodGrind garlic to a paste. Pressure cook potatoes , peel the skin and cut them into cubes.Heat oil in a pan add mustard seeds. When it splutters add the curryleaves and garlic paste. Fry till the raw smell of the garlic disappears and add onions . fry for some time and add chilli, turmeric ,garam masala powders along with salt. Then add the potatoes. Mix well, Simmer the flame , close with a lid and cook for 10 to 15 mins. Garnish with coriander leaves and serve hot.

Butter Shortbread
I always love the shortbreads and wanted to prepare this sometime. So I thought I will prepare this for cooking medley’s JFI event in which the main ingredient is Ghee and Butter. I think my entry is a bit late and I hope she will accept it.I searched for this recipe in the net and found lots.. This is the one I picked and tried and it came out really well. My daughter loved it because I had used different shapes.
IngredientsButter- 1 cup(room temperature)All purpose flour- 2 cupsSugar- ½ cup(powdered)Cornstarch- 1 tspSalt- 1 pinchMethodMix butter and sugar and beat it for 5 minutes till they are well mixed and the mixture is creamy.Mix and seive flour, salt and cornstarch.Add the flour mixture to the the butter. Fold in gently to make a dough.Refrigerate for 15 minutes to make the dough a bit firm.Roll out the dough into ¼ inch thick. Cut into round or whichever shape u want using a cookie cutter.
place them in the cookie sheets lined with parchment paper(I used foil because I was out of stock). Bake in a preheated oven for 12-15 minutes at 300 degrees F.Cool this and store in a airtight jar.
Note: Please Use only butter for this recipe. Do not use margarine or anything else in substitution for butter.

Vendakkai/Okra Fry
We usually make vendakkai masala or curry . My Mother used to make vendakkai fry sometimes. This recipe is quite different from the usual ones we make and I love to have it with Rice and sambar. Try it folks and I bet you will love this too..
Ingredients Vendakkai/okra- 300 gms(see to that they are yound and tender)Onion- 1 sliced thinlyChilli powder- 1 tsp or acc to tasteTurmeric powder- ¼ tspCurry leaves- 1 or 2 sprigsSalt to tasteOil for deep frying
MethodWash and dry the okra in paper towels(make sure it is dried well). Cut into medium rounds.Heat oil in a pan and deep fry till they are brown. Finally when you are done frying the okra pieces fry the onions till dark brown. Off the stove and fry the curry leaves. Add the fried onions and curryleaves to the fried okra. Add salt, turmeric powder and chilli powder and toss well so that it is well mixed. It can be called as okra chips too.Serve with rice and Sambar or Tomato rasam.

Bisibelebath
Bisibelebath/ Sambar sadham requires lot of patience.. .Though I like this a lot, I feel lazy to do this often, as it needs chopping, roasting , grinding and lots of work.The only relief is you dont need to prepare any vegetable curry with this .. It goes well with raitha and chips. Last week when I saw bisibelehuli anna in Nanditha's blog, I wanted to make it and so here is what I made..
IngredientsRaw Rice- 2 cupsThoor dal- 1 cupTurmeric powder- ¼ tspAsafoetida- ¼ tspPeas- ½ cupShallots- ½ cupTomatoes-2 cut finelyCarrot -1 chopped into small piecesBeans- 10 chopped finelyPotatoes-1 chopped into small piecesDrumsticks- 1 cut into 3” piecesBrinjal – 1 cut into cubes.Chowchow- ¼ cup cut into cubesGarlic- 6 clovesGreen chillies- 3These are the main veggies. U can add any vegetable u want to this except beets and bittergourd.The more the vegetables the better the taste. I added bottlegourd too with this.Sambar powder- 1 tsp(optional. As I use very little red chilies ,I add this for better colour.I use sakthi masala)Tamarind – 1 small lemon sized.Salt to tasteGhee- 5 tspCoriander leaves- 3 tsp choppedTo roast and grindChanna dal- 2 tspThoor Dal – 1 tspUrad dal- 1 tspCoriander seeds- 3 tspJeera- 1 ½ tspPepper- ½ tspFenugreek seeds- ½ tspSaunf/Aniseeds- ½ tspCurry leaves- a fewRed chillies- 3( the one I have is very spicy so I add little) or acc to tasteCinnamon- 2 one inch piecesCloves- 5Coconut- 3 to 4 tsp
Heat 1 tsp of oil in a pan and add all the spices except coconut and fry for 2 minutes. Then add coconut finally and fry for a minute. Cool it and grind it to a fine paste by adding water.For seasoningOil- 3 tspMustard seeds- ½ tpsBroken urad dal- ¼ tspFenugreek seeds- ¼ tspCurry leaves- a fewMethodPressure cook the dal with turmeric powder and asafetida and set aside. Soak the tamarind in water and squeeze the juice.In a cooker or big vessel, add 10 cups of water(1:5 ratio) . when it boils add the rice and the vegetables(from peas to green chillies). When the rice is ¾ th cooked. Add the dal and salt.mix properly and add the ground paste , tamarind juice, sambarpowder and ghee. Partly Cover and cook for a few minutes in reduced flame.Heat oil in another pan and add the seasonings one by one. Now add this to the rice. Garnish with coriander leaves. Serve hot with raita and papad/chips and ghee on top.This bisi bela bhath should be in a slightly semisolid consistency than the normal rice.

Tomato Rasam
This is a very simple , and easy to make rasam.Sometimes when I feel lazy I prepare this Rasam. I read this recipe somewhere in the internet, a couple of months before, and tried it . We loved it so much that it has become one of our regular menu now.Try this out and you will love this too …IngredientsTomatoes-( red ripe ) 4 medium sizedCoriander leaves- 3 tsp finely choppedSambar powder- ¾ tsp or acc to ur taste.( I use sakthi masala)Tamarind juice- 3 tspPepper powder- ¼ tspJeera powder- ¼ tspGarlic- 4 cloves mashed.Turmeric powder- a pinchSalt to tasteFor seasoningMustard seeds- fewJeera- ¼ tspRed chilli- 1Asafoetida- a pinchCurry leaves- a fewOil – 2tspMethodIn a pan add the tomatoes and fry for sometime till they turn mushy add the coriander leaves , sambar powder, salt, pepper, jeera ,turmeric powders and garlic.Fry for a minute and add a cup of water( I make this medium thick and if you want thin, you can add a 1/2 cup more water too, according to your taste.) to this and let it boil. Now add the tamarind juice to it. Heat oil in another pan and add the seasonings one by one. Add this to the rasam. Serve hot with rice.There are lots of varieties rasam. Kovakkai/Tindora masala
I had never tasted kovakkai before marriage. After marriage I found many of my friends cook this vegetable and when I happen to taste it I liked it too. Once when we went to a friend's house for dinner , she had cooked this curry.It was different with peanuts and I couldn't find out it was kovakkai. I got the recipe from her and whenever I buy this vegetable I cook this way.. ..Ingredients Kovakkai- 3 cups (cut lengthwise )Onions- 1 large chopped finelyGreen chilli-1 chopped finelyGinger garlic paste- 2 tspCoriander powder- 2 tspChilli powder – 1 tsp or acc to tasteTurmeric powder- ¼ tspCloves- 3 or 4Salt to tasteOil- 4 to 5 tspCoriander leaves- 2 tsp chopped finelyFor seasoningMustard seeds- ¼ tspJeera- ¼ tspCurry leaves - fewPeanuts- 3 tspMethodHeat oil in a pan add the seasoning items. Add the chopped onion and green chilli and fry till the onions become transparent. Then add the ginger garlic paste and fry till the raw smell disappears. Now add the kovakkai pieces and fry for some time. Add the turmeric, coriander and chilli powders. Crush or powder the cloves and add it to the masala. Add little water , simmer the flame and close it with a lid. Cook till the vegetable becomes tender and oil seperates. Pumpkin Raisin Muffins
I was thinking of trying a recipe with pumpkin for From My Rasoi hosted by meeta. I tried for the pumpkins but I could n’t find any in the local stores or markets last week. So I went in for canned pumpkins.Some History and facts about pumpkin( which I collected from the net)References to pumpkins date back many centuries. I have baked cakes and muffins from the ready to do mixes which is available in the grocery stores. But I haven’t tried home made regular cakes or muffins.This is my first try of baking a muffin.. I was thinking to do that for a long time…So now I searched for pumpkin muffin recipes. The one which was simple and the one which I liked was this. I was happy with the result except that sugar was a bit less . I added ¾ cup acc to the recipe but 1 cup would be perfect.I made 2 alterations to the original recipe. The original recipe had 1 tsp baking powder+ ½ tsp of baking soda and ¾ cup of milk. But as I didn’t have baking soda with me I added 2 tsp of baking powder itself. I wanted to add buttermilk and so I added ½ cup of buttermilk and ¼ cup milk. The muffins turned out great and I loved the raisins in it.This is my entry to Meeta’s From My Rasoi and Nanditha’s weekend Breakfast Blogging.IngredientsPumpkin(pureed) fresh or canned- 1 cupAll purpose flour- 1 ½ cupsSugar- 1 cupButter- ¼ cupEggs-2Salt- 1/8 tspMilk- ¼ cupButtermilk- ½ cupBaking powder-1 ½ tspBaking soda- ½ tspRaisins- ½ cupVanilla essence-1/2 tspMethodPre heat the oven to 400 F. Grease the muffin pan with oil.Beat the butter and sugar in a bowl till they are mixed well. Then add the eggs one by one and beat them well.Sift flour, baking soda , baking powder and salt together in a bowl.Add the flour mixture to the butter mixture. Fold in gently. Then add the pumpkin puree, milk and buttermilk and fold in gently again. Add the raisins and vanilla.
Fill in the muffin pan 2/3 full and bake in for 12 to 14 minutes or until it turns golden brown.(U can check it by inserting a sharp knife. When the knife comes out clean the muffins are done).Remove from the oven and let them cool a few minutes in the pan before removing.

Avial
Avial is a famous dish in Kerala. There are many ways of making this avial but this is the one I make which I found somewhere in the net. I liked this dish mainly because of the variety of vegetables in it.
IngredientsDrumstick- 5 pieces of 3” slit into halfYam(senai kizhangu)- 1 small pieceBeans- 8Carrot- 1 medium sizedBrinjal- 2 smallRaw banana- 1Potato- 1Curry leaves- a fewCurd- ½ cupTurmeric powder- ½ tspSalt to tasteCoconut oil- 3 tsp
To grindCoconut- 4 to 5 tspCumin seeds- ½ tspGreen chillies- 3 or acc to tastePepper- ¼ tspMethodCut yam ,carrots, beans, brinjal , raw banana and potato of same length- 1 to 1 ½ inch pieces.In a kadai add ½ cup of water and add a few curry leaves and drumsticks. Close with a lid and cook for 2 mins. Add all the other vegetables, turmeric powder and salt. Cook in a medium flame till the vegetables are cooked ,without adding much water.Add the ground paste and cook for 2 minutes. Beat the curd well and then add it.Finally add coconut oil and a few curry leaves and mix it.Avial is ready and serve it with hot rice.NoteU can add many other vegetables like pumpkin, snake gourd, cucumbers, peas, raw mango etc… acc to ur taste.

Carrot Kheer
This is one of my favourite recipes. It is a easy and quick to make recipe.. a rich and healthy one too. The kheer turns out to a wonderful yellow colour, that u can make believe anyone it is badam kheer. I have made this for parties and all my friends love it. I hope u will love this too.Ingredients Carrot- 1 large cut into thin roundsCashews- 8 to 10Almond essence- ¼ tspAlmonds or cashews chopped into tiny bits- 3 tspMilk-3 cupsSugar- ½ cup or according to taste.MethodPressure cook the carrots and cashews upto 3 whistles.When cool grind to a fine paste.Add sugar to milk and stir it well till it dissolves(u don’t need to heat it up ,can just add to cold milk itself ). Now add the ground paste too. Mix well and add the chopped nuts and essence.Serve chilled.TipsU can add saffron soaked in milk.U can add cardomom powder instead of almond essenceU can add milk more or less according to the thickness u want.

Gobi 65
Gobi 65 is a dry curry . I love to have this as a evening snack. U can have this with chappathis if u like.. Its easy to make and this doesn’t take much time to do if u have all the ingredients. Try it out and let me know.. Non vegetarians can try try it out with chicken..
IngredientsCauliflower-1Cornflour-3 tbspCapsicum- 1 small cut into thin stripsOnion- 1 cut into thin stripsTomato sauce- 1 ½ tspSoya sauce- 1 tspAjinimotto- a pinchChilli sauce(optional) – ½ tspChilli powder- 1 tspSalt to taste.OilMethodClean the cauliflower and cut into small florets. Soak it in hot water for 5 minutes.Drain the cauliflower florets and add corn flour,salt and chilli powder to it. Do not add water to it. Just fold in with ur hands. If needed just sprinkle very little water.Heat oil in a pan and deep fry the florets till golden brown . set aside.Add 2 tsp of oil in another pan and saute the onions and green pepper strips for 2 to 3 mins till the onions are transparent. Remove from fire and set aside.In the same pan add 1 tsp of oil and add add the sauces and ajinimotto. Immediately add the cauliflower florets and saute for 2 minutes in a slow flame. Then add the onion ,greenpepper strips. .. remove from flame.. gobhi 65 is ready to eat.

Kadalai Kuzhambu
Chickpeas are good source of protein. So I make it a point to include it in our diet more often. I learnt this from one of my friends and this has become our favourite kuzhambu now.U can try this with any other payaru instead of chick peas.
IngredientsChanna(chick peas)- ¾ cupOnions- 2 (if large or 3 if medium) chopped finelyTomatoes- 1 ½ chopped finelyGreen chilli-1 slit into twoOil- 4 tspTamarind- small lime sizeMustard seeds- ¼ tspCurry leaves- a fewFenugreek- ¼ tspSalt to
To grindCoconut- 4 tspPearl onions- 5Jeera- ½ tspPepper- ¼ tspTomato – ½Chilli powder- ½ tspCoriander seeds- 1 tspSambar powder- ½ tsp
Grind all this to a very fine paste.
Indredients ground to a fine pasteMethodSoak the channa overnight. Pressure cook that and keep it aside. soak the tamarind in water and squeeze the juice out of it. Keep aside.Heat oil in a pan and add mustard seeds. When it splutters add curry leaves,fenugreek seeds, onions and green chilli. Saute for some time till the onions become transparent and then add the cut tomatoes. Saute for some time till the tomatoes become mushy and then add the ground paste.Add the channa , tamarind water and salt to taste. Add 1 cup of water to it. Cover it partly with a lid and keep in a medium flame. Remove from fire when oil floats on top.Serve hot with rice .Note: If u are in a hurry u can straight away do it in the pressure cooker itself. In that case u dont need to pressure cook the channa seperately.

Stuffed Brinjal Curry
Many of you would know this famous dish from Andhra and I learnt it from one of my Telugu friends, a couple of years ago. She had made it for a party and I loved it so much that I asked her the recipe at once, and tried it the very next week. It was a big hit in our family and its now my husband’s favourite. Even though this recipe has been blogged by many others, I would like to add mine too.Try it out and let me know about it.
IngredientsViolet brinjals-10 (choose fresh and small ones)Tomatoes-2 finely choppedOnions-3 finely choppedChilli powder- 1 tspGreen chilli- 1 chopped finelyOil- 6 tspMustard seeds- ¼ tspJeera- ¼ tspTurmeric powder- ¼ tspCoriander leaves- finely chopped 2 tsp
To grindPeanuts-6 tsp dry roastedSesame seeds-6 tsp dry roastedCoconut grated- 2 tspGinger garlic paste- 2 tspGaram masala- 1tspSalt to taste
MethodWash the brinjals , do not remove the stem , and slit them vertically and horizontally like a plus sign(starting from the opposite end of the stem) without breaking them into halves.
Grind the ingredients to a fine paste. Acc to my friend's recipe the ingredients must be powdered. But as I did not have a good mixie with me when I first tried this ,I had to grind them to a paste. It turned out well and so I always try it out this way. If u want ,u can try it out in powdered form. Stuff the paste into the brinjal slits.
Heat oil in a pan and add mustard seeds and jeera. When the mustard pops add the onions and green chillies. Saute for some time and then add the brinjals and the remaining paste. Fry for some time and add the chopped tomatoes ,turmeric powder, chilli powder,salt and ½ cup of water. Close with a lid , simmer the flame and keep stirring every 5 minutes, gently without smashing the brinjals.
This takes a long time ( almost 30 to 40 minutes) to cook. Remove from heat when brinjals are tender and when oil floats on top. Garnish with coriander leaves.Serve hot with rice.

Paneer Parathas
I love stuffed parathas and so I prepare it often with different stuffings. There is another convenience in making stuffed parathas. You don’t need to make any gravy or curries for this as we do for the regular chappathi. U just can have it with raita or pickle.
IngredientsWheat flour-2 cupsPaneer- 1 cup gratedOnion-1 chopped finelyCoriander leaves-2 tsp chopped finelyTurmeric powder- ¼ tspChilli powder- ¾ tsp or acc to tasteGreen chilli- 1 cut finelyGaram masala- ½ tspSalt to tasteoilMethodAdd salt and water to the wheatflour and knead to a soft and smooth regular chappathi dough.Heat 2 tsp of oil in a pan and add the onions and green chillies. When the onions turn transparent add the turmeric, chilli and the garam masala powders. Saute for a minute and then add the grated paneer. Fry for 2 minutes and finally add salt and coriander leaves.
There are 2 ways by which u can do stuffing..1) Take a medium sized ball(slightly bigger than golf ball) from the dough and roll it into a thick chappathi(4” approx). Keep the filling in the center and fold the sides of the chappathi towards centre. Press in the middle slightly and dust with plain flour. Roll out into chappathis(6” approx) slowly without giving much pressure.
2) Take a medium sized ball and divide into two. Make small chappathis . keep the filling in one chappathi and close it with another. Dust with flour and Roll out into chappathis without giving any pressure .
Heat tawa and then place the chappathis and drizzle oil on the sides. Turn over and cook till it is golden brown. Serve hot with raita of ur choice and pickles.(u can apply butter on top if u like )

Today is vinayaka chaturthi and it is celebrated all over India in a grand manner. In my house When I was a kid , we buy a ganesha idol made of clay. I remember the beautiful,colourful umbrella which comes with the idol.We decorate our house with kolams, we tie mavilai and thoranam to the entrance of the house and the puja room.Kozhukattai(modak) is the favourite dish of Lord Vinayaka. So my Mom makes different varieties of kozhukattai and sundal which we offer during the puja.The third day after making a puja we immerse the idol in well. This is an interesting event and me, my sister and brother will be waiting to do this. In those days we had a well in our house and so we immersed the idol there. But nowadays there is only borewell in every house in chennai and so we take the idol to the temple.Festivals do make us remember of our childhood days.
Kozhukattai(1)This is yet another recipe I learnt from my MIL.She makes this once in a month for every ‘Sangadahara Chaturthi’.
Ingredients
Riceflour-1 cupCoconut grated -2cupsJaggery- slightly less than ½ cupMilk- ½ cupGhee- 1tspCardomom powder- ½ tspSalt – a pinchOil- 4 tsp
Method
Mix ½ cup of milk , 1 ½ cups of water to the rice flour, ghee and a pinch of salt together. Heat the batter in a pan (preferably non stick) and keep stirring without any lumps, till it forms a dough consistency.When it is cooled add 4 tsp oil to that and knead it into a soft dough.Make small balls out of this.Now for the filling mix the jaggery, coconut and cardomom powder in a pan and heat it. After 6 to 8 minutes if u take some in ur hands u will be able to roll out balls. Remove from heat now and when cooled make small balls(smaller than the rice flour balls).
Kozhukattais can be made in two ways.a) For ball shaped: press the rice flour ball in the middle and make a cup . keep the coconut ball inside this and close it.
b) For flat shaped: Place a plastic sheet on top and bottom of the riceflour ball and press with a small plate or bowl(round and flat). Place the filling and close it. Seal the edges and mark lines with a fork.
Steam the kozhukattais in pressure cooker using idli plates.Kozhukattai(2)
My Mom makes this type of kozhukattai very well.This is the first time Iam trying this .
IngredientsRiceflour-1cupJaggery- ¾ cupCoconut grated- 4tspCardamom powder- ¼ tspMethodAdd ¼ cup of water to the jaggery in a non stick pan and bring to boil. Add the other ingredients to it. When it forms a ball like dough without sticking to the sides, remove from heat.When cooled make small balls. Place them in ur hands and close ur fists to get the desired shape. steam them in idli plates for 10 mins(like idlis).

Rava Dosa
Rava dosa is a favourite recipe in our house. I make this once every two weeks. There are different versions in the measurements of riceflour, sooji and maida and I have tried many. Somehow I am comfortable with this version as it is quick and easy to make. It tastes delicious with sambar and chutney.This is my entry to Pavani's Weekend Breakfast Blogging Event .
Ingredients
Riceflour-1 cupRava or sooji- ½ cupMaida- ¼ cupSalt to taste
For seasoning
Mustard seeds- ¼ tspGreen chillie-1 chopped finelyPepper- a fewCurry leaves- a fewGinger- a small piece chopped finelyCoriander leaves- a few chopped finelyOnion- ½ chopped finelyOil and ghee
Method
Mix the rice flour, maida and rava and add water and salt to it. The batter should be watery and flowing.
Heat 1 tsp of oil in a pan and add mustard seeds, when it splutters add onions and other ingredients .Fry for 2 minutes till the onion turns transparent. Add this to the rava batter.
Heat the tawa (the tawa should be very hot while u are pouring the batter) and take one ladleful of batter and spread on the tawa starting from the sides and finishing off in the middle as rava dosa cannot be spreaded like ordinary dosa. Drizzle ½ tsp of oil and ¼ tsp of ghee on the sides. When it becomes golden brown turn it over.
Serve hot with sambar.
Note:
Make sure the batter is very thin(thinner than the dosa batter). If the batter becomes thick after making few dosas add little water to it.

I wanted to try Latha's (Masala Magic) paneer tikka rolls ever since I saw the recipe in her blog. Today for dinner I tried it and it was a big hit. It was very Delicious. As I didn’t have potato, which was in her recipe , I used some peas in the place of potato. I did seasoning with mustard seeds and curry leaves for the tikka curry too. Blueberry Peach Smoothie
We took our 4 year old daughter Vidhya to the farm last week.The farm had a blueberry & peach picking tour and a hay ride. A wagon filled with hay, tours the farm to pick the crops and brings us to the Animal barnyard. We had a good time picking blueberries and peaches while Vidhya enjoyed the animals in the barnyard.We picked a lot of berries and peaches and so I thought of making a smoothie with it…IngredientsRipe, juicy peaches-2Blueberries- a handfulBanana- ½ (optional)Honey- 1tspRose syrup-1 tsp( which we use to make rose milk)Sugar- 2 tsp or acc to tasteMilk-1 cupIce cubes- 5 cubesMethodWash , peel and cut the peaches. Combine all the ingredients in the blender and blend until smooth. Serve chilled.Note: It is optional to use banana , but banana gives a nice thick, creamy texture to the smoothie.

Paniyaram
Paniyaram is a sweet dish made with rawa. This sweet is made in our house on festivals like Tamil New year and Deepavali. U can try this snack anytime … I would like to share with u the recipe of paniyaram , which I made this weekend.IngredientsRava or sooji- 1 cupMaida-3/4 cupSugar-1cupElachi powder-1/4 tspOil for deep fryingMethodSoak the rawa in water for half an hour. Be careful to add very little water so that batter doesn't become too watery.Add sugar , maida and elachi powder to the soaked rawa. Mix it well and add little water if necessary. The batter should be thick like vada batter.Heat oil in kadai and pour the batter with a ladle( smaller than the one u use for dosa) one at a time. When it becomes light brown turn over.

Onion Chutney
IngredientsRed onions- 3Garlic- 5 clovesChilli powder- 1tsp or acc to tasteTamarind- 1 inch piece(small)Salt to tasteMustard seeds- ¼ tspSplit urad dal-1/4 tspCurry leaves – fewOil- 4 tspMethodPeel, wash and cut the onions into cubes.Heat 2 tsp oil in a pan and add the onions and peeled garlic.Fry in oil till onions turn golden brown. Remove from fire and cool.Grind the onion mixture with tamarind, chilli powder and salt.Heat the remaining oil in a pan and season it with mustard seeds , urad dal and curry leaves. Add this to the ground onion paste.Serve hot with idlis or dosas.

Red Bean Curry
I got this red bean from Korean market in NJ. I havent seen this fresh red beans in Indian stores.Back in India we make this curry using ‘butter beans’. Unlike this red bean it will be white in colour. It is used commonly in south part of Tamilnadu(Virudhunagar, Tuticorin etc). I have tried different varieties of beans to prepare this curry but only this red bean was similar to the taste of the butter beans. Here goes the recipe.
Ingredients Red beans- 1 packOnions-1 finely choppedChilli powder- 1 tspCoconut gratings- 3 tspSaunf-1/2 tsp toKhus khus-3/4 tspMustard seeds-littleCurry leaves – fewOil-4 tspSalt to tasteMethodPressure cook the red beans with salt for 1 whistle.Grind coconut , saunf and khus khus into a fine paste.Heat oil in a pan and add mustard seeds. When it splutters add onions and curry leaves. Saute till turns transparent and add the ground paste and chilli powder.saute for a minute and then add the cooked beans. Add salt to taste and add ¼ cup of water. Cook till it becomes thick and dry.Serve hot with rice and sambar.

Sakkarai Pongal
Happy Krishna Jayanthi!!!Sri Krishna Jayanthi - also known as Gokulashtami or Janmashtami, is the birthday of Lord Krishna. In Tamilnadu the houses are decorated with Maavilai and thoranam(leaves from mango and palm trees). Patterns of small feet, drawn with rice flour are made, leading from the house entrance to the puja room, where the idol of Lord Krishna is kept. This symbolises the baby Krishna coming to his devotees' house to bless them and leaving behind his footsteps.Special dishes like murukku, seedai, vella seedai, thengozhal, payasam are all made and offered to the Lord. In the evening, usually a special pooja is done to mark the occasion and people ask one another "krishnar onga veetukku vandacha?" (Has Krishna come to your house?). Kids are also dressed up as Krishna and Radha (young Krishna's lady love at Brindavan).Source- Chennai onlineIngredientsRaw Rice-1 cupMoong dal-1tspMilk-1 cupJaggery grated-2 ½ cupscashews-10Raisins-10-15Ghee-3 tbspElachi powder- 1 tspMethodPressure cook rice and moongdal with milk+water in the ratio of 1:3.Add ½ cup of water to the jaggery and heat it. When the jagagery melts completely in water , remove from fire, filter it( to remove the dirt from jaggery) and add to the cooked rice. Stir for 3 mins so that the rice and the jaggery blend together.Heat ghee in a pan and add cashews and raisins to it. Fry till it becomes golden brown and add to the pongal. Finally add elachi powder to it.

Pasta with tomatoes and green pepper
I saw this recipe in food network channel. I liked it , but I added the maggi masala powder for better taste. If u do not have maggi powder any curry powder is fine. Try this out and let me know.IngredientsPenne rigate pasta- 3 cupsOnions-1 chopped finelyTomatoes- 1 chopped finelyGreen bellpepper-1 chopped finelyTomato sauce-4 tspMaggi masala powder- 1 packSalt to tastePepper- 1/4 tspGarlic-1 clove chopped finelyOil- 1 tsp (extra virgin olive oil is better)MethodBoil the pasta with salt . drain and rinse in cold water.Heat 4 tsp of oil in a pan and add onions and garlic. Sauté till the onions become transparent and then add the bell pepper and tomatoes. Sauté for 2 minutes and then add the tomato sauce, salt , pepper and the maggi masala. Fry for a minute and then add the cooked pasta. Mix it well with the masala. The pasta is ready to eat.

Kheer
When I saw the ingredient for JFI event in vineela’s cuisine the first thing that came into my mind was ‘sweets’. Yes milk and milk products always remind me of sweets somehow.Iam posting a simple but very tasty , easy to cook recipe of KHEER.I learnt this recipe from one of my friend.One reason I like in this recipe is, it is made without ghee, but still tastes rich. Try out this and let me know.IngredientsWhole Milk-6 cupsSugar-3/4th cupBasmathi rice-1/4th cupCashews-15 to 20Raisins – a fewCoconut grated -2 tspMethodBoil the milk in a thick bottomed pan.(It is better not to do this in a non stick pan as milk becomes brown at the bottom of the pan ) if u do not have a thick bottomed pan use a pressure cooker.Grind the basmathi rice in the mixer( do not grind it finely. Grind it very very coarsely. Just one turn of the mixer and that is enough. Basically the rice should be brokenInto two..)Add the rice , cashews , raisins and coconut to the boiling milk.Keep in a medium flame for 15 minutes,partly covered and stirring in between.After 15 to 20 mins the milk would have become thick and rice would have been cooked. Check for it.Finally add the sugar . keep in flame 3 to 5 mins till the sugar dissolves completely and remove from fire.Cool it and refrigerate it.Serve chilled.Note:Serve this chilled. This tastes yummy when it is cold than warm.U can use condensed milk instead of sugar too..

Pineapple Upside Down Cake
I don’t do that much of baking ,though I wish to. This cake is done using readymade cake mix. It is a very easy and quick to makeCake. It tastes delicious too….IngredientsBetty crocker super moist cake mix(french vanilla)- 1 pktPineapple slices- 1 tinCherries(fresh or tinned)- a fewI have used fresh ones . but the tinned ones are betterEggs- 3Oil- ¼ cupWater- 1 ¼ cupButter- 1 tsp
MethodPrepare the cake batter as per the directions in the cake mix packet using eggs, oil and water.In a cake pan smear butter and then arrange the pineapple rounds and cherries.Pour the cake batter until ½ of the pan. Leave space for the cake to rise.Bake the cake in a 350 degrees preheated oven for 30 to 40 minutes.When cool place a plate on the cake pan and turn it upside down.

Here’s a different paneer recipe flavoured with ginger,amchur(dry mango) powder and sharp and peppery,Nigella/Kalonji.Thanks Bindu,for sending me this wonderful recipe,she is a regular visitor of my blog,and a busy mom with two little kids.She had send me two of her family favorite Paneer recipes,and asked me to share with you all.
So here goes the first one..
Ingredients :-Paneer cut into cubes - almost 2 cupsDry Ginger powder - 2 tspMustard Seeds - 1 tspFenugreek seeds - 1/2 tspOnion Seeds(Kalonji) - 1/2 tspJeera seeds - 1 tspChopped Onions - 3Chopped Green chillies - 3 -4Turmeric powder - 1 tspcrushed Garlic flakes - 5-6Crushed Ginger - 1 inch pieceBeaten curd - 1/2 cupAmchur(Dry Mango powder- 1 and 1/2 tspRed Chilli powder - 1/2 tspSlit green chillies - 3-4Salt - to tasteOil - as needed
Method:-Heat oil in a pan and add dry ginger powder,mustard seeds,fenugreek seeds,onion seeds and jeera and fry till they crackle.Add chopped onions and green chillies and saute until golden.Add in turmeric powder ,crushed garlic and crushed ginger and fry for 2-3 mins.Gradually add beaten curd stirring constantly.Add amchur powder and salt and cook till curd dries slightly.Just before serving mix in paneer cubes and slit green chillies.Sprinkle red chilly powder and stir for 1-2 mins on low flame.Serve hot with roti/naan.

Papaya,which is considered to be one of the healthiest and nutritious fruit is often ignored by many people.Personally,I too hate this fruit,but on the other hand my kid loves it.This Papaya drink is his new favorite,the recipe is adapted from an old edition of Vanitha magazine.It goes like..
Ingredients:-
Ripe papaya pulp - 1 cupHoney - 3 tbspLemon juice - 1 tbspCold Milk - 1 small glass

Butter Shake

Long back,I’ve had a butter fruit shake from Mananchira Square,Calicut which is the Home of Shakes.The drink in its pale green color was just awesome and its flavour had forced me to visit the shake shop again on my next Calicut visit.But I couldn’t have it then,as the fruit was not available at that time.In fact,I didn’t get a chance to taste it after that ,eventhough I’ve made 3 or 4 attempts.I didn’t even know how does this butter fruit looked like.Anyway its divine & deadly taste still stays with me.(See a shake menu below..You can see butter shake in that..I got it from here.)
Last week my friend Shuba suggested to try it with Avocado .She got this idea from Mahanandi(Avocado Chapati ),in which Indira had mentioned about Avocado as nature’s butter.Thanks to Indira & Shuba..it did work out with avocado and it tasted exactly the same..I missed it all these years…But I still wonder whether they are using Avocado over there in Kerala,or is there some other fruit called butter fruit !!!!!!Hope to clarify my doubts during next visit.(Next time i’ll take a photograph of Avocado with me and clarify my doubts with the shake shop wala..so that he cannot disappoint me with his usual excuse - the non availability of fruit)Back to the simple Avocado shake recipe:-

Banana Milk Shake with a twist…. “Sharjah” which is famous for its taste as well as its name is considered to be the King of all fruit shakes in Kerala.This is an ideal mini meal at Manachira Square(Calicut) which is the Home of Sharjah Shake.Due to the rising heat of summers,now it is getting popular all over Kerala .Another fruit shake which is famous for its Arabic name is “Saudi”.It is also a milk shake with dates as its main ingredient.
My recipe for Sharjah milk shake goes like this…
Ingredients:-
Bananas -2Chilled Milk - 1 cup (Keep milk in freezer until chilled)Boost or Any Chocolate Flavoured Drink Mix -1/2 tspSugar - 2 tbspCardamom crushed - 1Water -1/2 cup.
Method:-
Add Bananas,Sugar,Water,Cardamom and boost to a mixer and blend well .Now add chilled milk and blend for just 2 seconds .Sprinke 1/4 tsp of sugar to the mixture and mix it lightly using spoon.The occasional crunch of chilled milk and sugar makes it more interesting.Serve immediately.Posted by Annita

Last week i’ve tried Vee’s Shorvedar Sabzi,and it came out very good.Through this recipe i’ve even started using Nigella seeds in my home cooking.Thanks Vee for sharing such tasty and colorful recipe with us.
Here goes the recipe…
Ingredients:-
Potato diced - 1 medium sizedCauliflower cut into florets - 1/4 medium sizedCarrot cut into slightly thick rounds - 1Green Peas - 1/4 cupChopped Tomato - 1 medium sizedTomato paste - 2 tbspChopped Carrots - 1 or 2 tsp
Red Chilly POwder - 1 tspCoriander POwder - 1 tspTurmeric Powder - 1/4 tspCumin POwder - 1 tsp
Mustard Seeds - 1/2 tspCumin Seeds - 1/4 tspFennel Seeds - 1/4 tspKalongi/Nigella Seeds - 1/4 tsp
Oil - as neededSalt & pepper - to taste
Method:-
Take oil in a pan and shallow fry potatoes,cauliflower and carrot one after another and keep them aside.As Vee says,this step is optional.
Add mustard seeds to the remaining oil,and allow it to splutter.Also add cumin seeds,fennel seeds and nigella seeds and fry it for a while.Stir in chilly powder,coriander powder,turmeric powder and cumin powder and immediately add tomato paste,chopped tomatoes,green peas,salt,pepper and chopped carrots.Stir it ,cover and cook till tomatoes are well blended and oil starts to seperate.Mix in the fried veggies and cook for another 2-3 mts,adding water if needed.Switch off the heat and serve.
Samosa Chaat…

Samosa and chaat…. Hmmm… do they go together??? Well yes I have eaten a lot of this back in Mumbai and these days we even get this here in Singapore. I made this dish last week when I had some friends over for diwali.
You can make Samosa from here. Since I had a huge group of people coming over I ordered them from outside and made rest of the items at home.
For the chole:
Chole
Soda Bi-Carb
Onion
1/2 bunch mint leaves
4-5 cloves of garlic
Ginger
3-4 green chillies
Chole Masala
2-3 tsp tamarind pulp
Jaggery
Salt to taste.
Tempering:
Oil
Jeera
To make the chole:
Take mint leaves, garlic, ginger and green chillies and grind them into a paste.
Soak the chole for 6-8 hours and then pressure cook it for 3-4 whistles with salt and soda bi-carb
Keep it to boil (do not discard the water) and add the paste and onions.
Add 2 tsp chole masala, 2 tsp tamaring pulp and jaggery. This is not to give sweet taste to the chole but only to balance the tamarind.
Prepare the tempering but heating the oil and jeera till the jeera becomes brown and add to the chole.
Taste and check if anyhting is missing or the taste needs to be adjusted. The chole is ready.
Chutneys: (I will post the recipes soon)
Red Garlic Chutney
Green corrainder and mint chutney
Tamarind and Khajoor Chutney
How to proceed:
Break the samosa in pieces and pour some chole over it.
Add all the three chutneys as per your taste.
And finally sprinkle some finely chopped onions and sev.
